I look forward to any holiday with my girls. They get time off of school which means that I get more time with them. The last thing I want to do, however, is spend that precious time in the kitchen recreating the perfect meals my mother used to. Since Easter is early this year, April 5, I am certainly planning ahead. It feels like it is just around the corner. With my busy single mom lifestyle, I am coming out of Spring Break with more to do than going in. Easter is going to sneak up on me before I know it.
