How it is that we can now be on a school schedule and know exactly how much time we have but still run like crazy to get it all done is beyond me! Monday night is math homework for all three, Tuesday is gymnastics, Wednesday is dinner with their dad, Thursday is English homework, Friday is insane and don’t even get me started on the weekends! There is just simply no time left! I can admit that dinner sneaks up on me and sometimes consists of whatever is in my freezer and pantry. One of our absolutely favorite family meals is Fettuccine Alfredo with Chicken. I make an amazing Chicken Alfredo recipe from the slow cooker but on days when things are out of control, sometimes just the tossing of the ingredients in slips my mind. When that happens, which is more than I care to admit, I start the hunt for food within my home. Tyson Grilled & Ready Chicken Strips & Barilla Pronto Pasta can help me get a family favorite on the table, fast!
If you know me, you know I love to sneak in little goodies to my recipes. Especially if I feel like I can get away with it with the kids. In this super fast, 10 minute meal, I like to chop up Cauliflower and add it into the mix. It is white, so the kids don’t really ‘see’ it, and it softens and becomes part of the dish. Not one of my kids ever notices it!
Chopping up the Cauliflower and the chicken is literally the only work I put into this meal! I don’t even drain the pasta! That’s right! Barilla Pronto Pastas are ONE pot, 10 minutes to ready pastas that require NO Boiling, and NO Draining! And on those nights when the stove is just too much, you can microwave the Barilla Pronto Pasta to al dente perfection!
Just add the pasta to the pot, I used Spaghetti for this one, add 3 cups of cold water and cook according to the instructions! The pasta cooks quickly and easily right before your eyes and my strainer can stay in the cabinet and out of my dishwasher! As far as the chicken goes, the reason I always have Tyson Grilled & Ready Chicken Breast Strips in my freezer is that they are fully-cooked, 98% fat free and have no preservatives! I can heat them up in the microwave or oven and add them to any dish I want from salads to pastas! Grilled and Ready Chicken Breast Strips provide a high protein meal solution. I love that for my girls!
Now to the meat and pasta of the recipe:
- 1 Box Barilla Pronto Pasta, Spaghetti
- 1 cup Tyson Grilled & Ready Chicken Breast Strips
- 3 cups water
- ½ cup cauliflower, chopped finely
- 1 cup butter
- ¾ cup heavy cream
- dash of ground garlic
- ¾ cup grated Romano Cheese
- ½ cup grated Parmesan Cheese
- dash of pepper
- In a pot, place the Barilla Pronto pasta in 3 cups COLD water. Bring to a boil then reduce heat while it cooks. Check the package for instructions. While that cooks, place Tyson Grilled & Ready Chicken Breast Strips on a plate and microwave until slightly warm. Chop Cauliflower finely.
- In a sauce pan, bring the butter, heavy cream, garlic, grated cheeses and pepper to a slow boil. Add Cauliflower.
- When the Barilla Pronto Pasta is done, throw in chopped chicken, saucepan of Alfredo sauce and stir. Serve warm.
It really does not get any easier than this, I have to tell you! If you want a short cut on the sauce, you can make this with any of the amazing marinara sauces that Barilla offers and and give it a tomatoy twist! On nights when I we are swamped these products give me a complete dinner in minutes. That allows me to spend more time helping with homework or just goofing off with the kids!
