It is cold and miserable outside. Even in Texas we have ice on the roofs, hanging from the trashcan and burdening our trees. I am actually watching one branch that, should it fall, my electricity will be cut and I will be relying on candles and patience to get through it. Luckily it has held on so I have been able to make one of my favorite comfort foods ever! Chicken and Dumplings. But, as you know, I like to add twists to my recipes to make them a little more fun. So I added bacon and chives to the dumplings and got the amazing and delicious Slow Cooker Chicken and Bacon and Chive Dumplings!
- 4 Chicken Breasts (mine were frozen)
- 2 cans cream of chicken soup
- 1½ cups biscuit mix
- ½ - ¾ cup of milk for biscuit consistency
- 2 tablespoons bacon bits
- 2 tablespoons chives
- Place the chicken breasts and cream of chicken soup in the crock pot. Cook on high for 5 hours. Mix biscuit mix, milk, bacon and chives to create biscuit mixture. Drop spoonfuls into the crock pot. Cook on high another hour. If you add too many biscuits and it takes the juice, add some chicken broth 15 minutes before done. You can tell as the biscuits rise in the slow cooker. Serve topped with more bacon bits and chives.
If you don’t want to make the biscuits, you can use a can of biscuits from the store. Tear them up and mix them with the bacon bits and chives. They won’t be mixed in but you still get the same flavor.
The slow cooker I use is a Cuisinart 3.5 gallon one with a programmable display. It is awesome as it automatically stops cooking and just warms when the timer is done. I got it on sale on Amazon!

Can you convert that to low temp cook time? I am gone from home 11 hours a day so I need to be able to cook on the low temp setting. Thanks!
