I never thought I would say this as a mother of three girls. But basketball has become a part of our daily lives. Mostly due to the weathered basketball goal that sits in our cul de sac for all to use. My middle daughter, Sarah, has taken a real interest in shooting hoops. She gets off the bus, drops her backpack and grabs her basketball. Even at regulation height, she can shoot that ball and make it! Not bad for a tiny little girl. As a mom, I always want to encourage my girls no matter what they want to do. So to celebrate the tournament coming up on television for basketball fans everywhere, and my daughter’s desire to watch as much of it as she can, I whipped up a fun treat with one of my families favorite candies! Skittles! My Skittles Popcorn Squares will make you rebound the rainbow on your taste buds!
An ooey, gooey treat, Skittles candies add a little flair to each square. Add them to any basketball celebration – whether it be with the neighborhood goal or celebrating with your favorite team on television – and enjoy as you understand that it’s only madness if you don’t have Skittles!
Since I knew that I would be throwing my supportive mom self behind my daughter and her love of hoops, I had to stock up on Skittles too. After all, what is a basketball tourney without a Skittles tourney to go with it? Shopping at Sam’s Club the other day, I saw the 54 ounce bag size of Skittles. I grabbed it knowing that whether people were dunking their hands into a large bowl or munching on my Popcorn Squares, I would need a serious supply! Just look for the huge pallet full with the ‘Make your Tourney awesomer’ sign!
Now onto these super simple Skittles Popcorn Squares. Making them is easy, devouring them is even easier. With four simple ingredients – popcorn, marshmallows, butter and Skittles – you can have a batch whipped up in no time for tournament watching!
- 4 quarts popcorn (or more to soak up marshmallow mixture)
- 1 10 ounce bag of marshmallows
- ½ cup butter
- 1 cup Skittles Candies
- Melt the butter and add the marshmallows. Stir as melting to smooth. Add popcorn and stir until liquid is gone. Add ¾ of the skittles. Using a greased casserole dish, pour the mixture in and use a piece of parchment paper to pat down, filling air holes. Add remaining Skittles. Let cool, cut and serve.
As you cut and serve the Skittles Popcorn Squares while the tournament is on, watch as the chewy candies mix with the sweet popcorn and please every mouth that tries them! You will feel like you have a slam dunk on fun treats on your hand!
