So after I picked up my Bertolli Chicken Alfredo & Penne, along with some other varieties, I headed to the fresh bread section as well. I am setting up for a dinner for girls night in that includes Bertolli® Chicken Alfredo & Penne, a beautiful Pear and Date salad and fresh Parmesan bread. This meal is going to be a hit and it all starts with a main meal that takes minimum effort with maximum flavor.

I have a weekend without kids coming up and I am inviting a few friends over for a girl’s night in. I do not want to be in the kitchen all night so I am definitely relying on Bertolli® Chicken Alfredo & Penne to impress! I am pairing it with a warm and cheesy Parmesan bread using bread from the Kroger fresh bread section and a beautiful Pear and Date salad that everyone who has it loves!

Let’s start with the Bertolli® Chicken Alfredo & Penne meal. Following the directions on the package, I heated the meal for 12 minutes in a skillet. I could smell the wonderful aroma as I prepared the bread and salad. It is that simple, guys. That simple!

As my Bertolli® Chicken Alfredo & Penne was heating, I heated my oven broiler on high. On the fresh bread I got from Kroger, I added garlic olive oil and piled on the Parmesan cheese. All you have to do it ‘toast it’ for about 4 minutes up by your broiler. Watch it because the moment you see it browning, you need to remove it!

Ingredients
  • 1 Tbsp extra virgin olive oil
  • salt
  • black pepper
  • 2 tsp pure maple syrup
  • ½ lemon, juiced
  • 1 tsp coarse ground mustard
  • 4 cups arugula, washed and dried or buy premade from Kroger
  • 4 prepitted dates
  • 1 pear, thinly sliced
  • a few shavings of parmesan cheese
Instructions
  1. Blend the olive oil, maple syrup, mustard and lemon juice in a small blender. Meanwhile, wash the salad and set aside. Slice the pears thinly, chop the dates and add both to the bed of lettuce. Dress with the salad dressing and serve.

A few tips on this recipe:

  1. I used pre-washed Arugula from the Kroger salad section
  2. I found the dates, actually ‘Honey Pitted Dates’ in the whole foods section of Kroger
  3. If you do not have a blender, use a fork or whisk and beat well

I have to say, the fresh flavor of the salad paired with the warm Parmesan bread only enhances the simple ingredients in the Bertolli® Chicken Alfredo & Penne. It is a delicious, well rounded meal that my girlfriends will think I slaved over! I’ll end the meal with fresh berries and whipped cream to round out the special occasion!
