This Pear and Date salad pairs well with Bertolli® Chicken Alfredo & Penne!
Ingredients
1 Tbsp extra virgin olive oil
salt
black pepper
2 tsp pure maple syrup
½ lemon, juiced
1 tsp coarse ground mustard
4 cups arugula, washed and dried or buy premade from Kroger
4 prepitted dates
1 pear, thinly sliced
a few shavings of parmesan cheese
Instructions
Blend the olive oil, maple syrup, mustard and lemon juice in a small blender. Meanwhile, wash the salad and set aside. Slice the pears thinly, chop the dates and add both to the bed of lettuce. Dress with the salad dressing and serve.
