There are few comfort foods quite like a warm, buttered piece of banana bread. It is one of my all time favorites. I have my best recipe but, if you know me, you know I like to change things up every once in a while just to make it interesting! I add all kinds of things in to see how they work. Cranberries, dates and even pistachio nuts! But when I got a huge shipment of Back to Nature products, which included a variety of their amazing granola’s, I was inspired! Especially when I saw the Gluten Free Chocolate Delight variety. Banana Bread + Granola + Chocolate = perfection! I had to experiment with a few loafs, poor me, I know, before I came up with the right amount but I did perfect it for you!
If you have walked around your store you have seen the wide variety of Back to Nature Products! From amazing snack crackers like their Pink Himalayan Salt Sprouted Rice Crackers to their amazing Gluten-Free Granola to Chewy Chocolate Chip cookies, which my children devoured, they have something for everyone.
As mentioned, the Chocolate Delight varity of Back to Nature granola is gluten-free. While this recipe is not, it is a great snack to have while watching TV or even an excellent way to start your day! Just add some almond milk!
Now to this awesome recipe that is made even better with the crunch of the Back to Nature Chocolate Delight Granola!
- 1 cup packed brown sugar
- 2 eggs
- ¾ cup vegetable oil
- ½ cup plain Greek yogurt
- 1 tspn vanilla
- 2 mashed bananas
- ½ c chopped walnuts
- 1 tspn baking powder
- 1 tspn baking soda
- 2 cups flour
- 1 c of Back to Nature Chocolate Delight Granola
- ½ c banana chips
- Preheat oven to 375. Grease a loaf pan with spray. In a bowl, mix together sugar, eggs and oil. Add yogurt and vanilla, mix and add bananas and walnuts. Combine flour with baking powder and baking soda. Stir into banana mixture. Last, but not least, stir in the Back to Nature Chocolate Delight granola and crushed up banana chips.
- Bake for 45 minutes. Let cool on a rack. Slice and serve!
Be sure to mix without over-mixing. I folded in the granola and banana chips to make sure I did not over-mix. You want the batter as light and fluffy as possible.
Also, be sure to insert a knife close to complete cooking time. I let one loaf cook too long by just assuming it would be done at 45 minutes! Keep track of it so that you get that moist bread that we all love!
