Fall is here, the temperatures are dropping and I am looking for easy dinner ideas that everyone will love. Something I can make that will warm us all on those chillier evenings when we are more focused on the conversation than the recipe. While walking through Walmart the other day I saw a huge stack of Progresso Rich & Hearty Chicken & Homestyle Noodle soups about to go on shelves. My visions of a warm, steamy bowl of soup had me going directly to the soup aisle and not passing go! I found what I wanted and decided to stock up. After all, it is the season to stock up on rich delicious soups for those instant meals everyone loves! While throwing cans in my cart I decided that my Cornbread with Smoked Gouda and Sun Dried Tomatoes Recipe would pair perfectly with the soup! So I got my ingredients and headed home.
I have to tell you, when I am on on a schedule and trying to get everything done that I need to, I barely have time to even think about food. But if I can toss the dry and wet ingredients of this cornbread in a bowl and then bake it in my cast iron skillet, I have a side dish that enhances and soaks up all of the juices of Progresso Rich & Hearty Chicken & Homestyle Noodle Soup. It can handle it too. With huge noodles that fill the spoon, big chunks of real chicken and bite size slices of carrot to add to the flavor, it really is a meal in a bowl. Plus, with quality ingredients including antibiotic free, all white meat chicken, I can feel great about eating it and even better about serving it to my kids!
A while back I discovered this Cornbread with Smoked Gouda and Sun Dried Tomatoes, modified it a little for my family’s tastes and have been making it ever since. It is the perfect compliment to soup as it enhances every flavor Progresso has. I even crumble it up in the soup and let the broth soak into the little crevices making it even more delicious! It is fairly easy to make, takes less than 10 minutes to put together and comes out of the oven warm and ready to dip!
- 1¼ cup yellow cornmeal
- ¾ cup flour
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- ⅛ teaspoon pepper
- 2 eggs
- 1 cup buttermilk
- ¼ cup vegetable oil + 2 tbsp for the cast iron skillet
- 1 can corn, drained
- ½ cup shredded smoked gouda cheese + 2 tbsp for garnish
- 2 tbsp chopped sun dried tomatoes stored in olive oil
- 1 tbsp parsley
- Heat your 10" cast iron skillet on low heat while you prep. Heat the oven to 400 degrees. In a bowl, mix the cornmeal, flour, baking powder, sugar, salt and pepper. Set aside. In another bowl, wisk the eggs, buttermilk and ¼ cup of oil. Add corn, ½ cup of cheese, sun dried tomatoes and parsley. Mix well. After creating a well in the dry ingredients, add the wet and mix well.
- Add 2 tbsp oil to cast iron skillet. Add mixture. Spread mixture evenly with rubber spatula. Sprinkle 2 tbsp cheese on top.
- Bake 20 - 25 minutes at 400 degrees. Serve immediately.
This is a great recipe to take and add things into. Add ham or turkey or use smoked mozzarella or another cheese you like instead. Make sure you use oven mitts on the cast iron skillet as it is very hot from stove top to oven.
