Cornbread with Smoked Gouda and Sun Dried Tomatoes Recipe

This Cornbread with Smoked Gouda and Sun Dried Tomatoes compliments soups, salads and more!
Ingredients
  • 1¼ cup yellow cornmeal
  • ¾ cup flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ⅛ teaspoon pepper
  • 2 eggs
  • 1 cup buttermilk
  • ¼ cup vegetable oil + 2 tbsp for the cast iron skillet
  • 1 can corn, drained
  • ½ cup shredded smoked gouda cheese + 2 tbsp for garnish
  • 2 tbsp chopped sun dried tomatoes stored in olive oil
  • 1 tbsp parsley
Instructions
  1. Heat your 10" cast iron skillet on low heat while you prep. Heat the oven to 400 degrees. In a bowl, mix the cornmeal, flour, baking powder, sugar, salt and pepper. Set aside. In another bowl, wisk the eggs, buttermilk and ¼ cup of oil. Add corn, ½ cup of cheese, sun dried tomatoes and parsley. Mix well. After creating a well in the dry ingredients, add the wet and mix well.
  2. Add 2 tbsp oil to cast iron skillet. Add mixture. Spread mixture evenly with rubber spatula. Sprinkle 2 tbsp cheese on top.
  3. Bake 20 - 25 minutes at 400 degrees. Serve immediately.
