Brownies are always huge hit at home and for togetherness with company; how can you even improve on a classic?  A brownie bite sampler is a great idea to not only give several options, but to please everyone all in one dessert!  Afternoon cards, wedding showers or just hanging out with family, brownie bite kabobs are the perfect twist on an old classic!

Brownie Bites Kabob

 Each serving for this kabob is about 1/4 of a brownie, so with the added twist of toppings, you are getting the most out of your brownie experience! I simply used wooden skewers to present the entire sample.

  • The first bite is rich mini cheesecake with caramel and chocolate drizzle.
  • The second bite is lightly frosted with fudge icing and mini marshmallows.
  • The third bite is lightly frosted with chocolate icing and dipped in crushed heath bar.
  • The last and final bit is just simply chocolate frosting.

The possibilities are endless for this kabob, leaving you plenty of wiggle room to add your favorite toppings!

Brownie Bite Kabobs/ Mini Cheesecakes

Ingredients
  • Use your favorite brownie mix, prepared per package directions.
  • Crust:
  • ¼ Cup Crushed Vanilla Wafers
  • 1 T butter melted.
  • Mix crushed wafers and butter until is can stand alone when pressed together.
  • Fill mini muffin liners with the crumbs using about 1 T. in each liner.
  • Press them firmly into the bottom.
  • I used a Mini Tart Shaper to press them down firmly.
  • Cheesecake Filling:
  • Cheesecake filling
  • 4 oz cream cheese (softened to room temperature).
  • 2 T. granulated sugar
  • ¼ Tsp. clear vanilla extract (clear or brown vanilla extract)
  • ½ Tsp. Lemon Juice (about ½ of a small squeezed lemon)
  • Pour the filling into the mini liners nearly to the top.
  • Bake at 350 degrees for 15-18 minutes or until center is set.

  1. Crust for Mini Cheesecakes
  2. Fill mini muffin liners with the crumbs using about 1 T. in each liner.
  3. Press them firmly into the bottom.
  4. I used a Mini Tart Shaper to press them down firmly.
  5. Pour the filling into the mini liners over the crust; nearly to the top.
  6. Bake at 350 degrees for 15-18 minutes or until center is set.
  7. Once cooled cut to fit the brownie top and drizzle with caramel and chocolate sauce.
