We ALL need a sweet treat that cannot be resisted in our recipe box. But we also need a treat that we can eat and not feel so bad about. Enter 5 Minute Paleo Coffee Cup Cake.

Guys… delicious… like… DE-LICIOUS!

All you need is a coffee cup and some whole food ingredients and this will be in your belly in less than 10 minutes!

Add a little cream or Paleo ice cream to the top and savor it with less guilt and more flavor! I was so surprised at how delicious this is! I am so glad my friend, Missy, made it for me!

Ingredients
  • 3 tbsp Coconut Four
  • 3 tbsp Unsweetened Cocoa Powder
  • 2 tbsp Raw Honey
  • 2.5 tbsp Melted Butter
  • 1 Egg
  • 1 tsp Vanilla
  • 3 tbsp Almond milk
  • 1 tsp cinnamon (optional)
  • 2 tbsp Gluten Free, Diary Free Chocolate Chips (optional)
Instructions
  1. This is the easiest and quickest dessert ever made! If your ever in the need for a quick sweet treat give this one a try.
  2. Melt butter in a microwavable bowl.
  3. Pour into a large coffee cup.
  4. Add the remaining ingredients in the coffee cup. Mix well with fork. You can mix in a mixing bowl with a mixer if desired.
  5. Once it is all mixed well pop it in the microwave for 2 minutes.
  6. Let is sit for a couple of minutes allowing it to cool down...it will be hot!
  7. Serve by it self or with any ice cream of choice. I prefer vanilla bean coconut milk ice cream.
