I posted on a mini post a few weeks back that I would like to lose 38 pounds in 52 weeks. I am not going to inundate my blog with weight loss stories, but I promised some joining me quick updates.
So- after week 1, I have lost 1.4 pounds. I have only made one small change and it seems to be helping. I eat a TON of spinach! LOL
I need it anyway, for energy and weight loss, so I have gotten creative.
For breakfast I usually have a cup of spinach with 1 whole egg and two egg whites. I add a teaspoon of crushed garlic and about a teaspoon of Mrs. Dash’ Lemon and Herb seasoning. It is, surprisingly, very good! Lunch is my new favorite! I am having about a cup to a cup and a half of spinach. I top it with 2 hard boiled eggs, a teaspoon of bacon bits, a teaspoon of Mrs. Dash and Balsamic Vinegar Fat Free dressing. It is a super yummy salad and Megan curls up on my lap and eats away at it too.
Dinner is what my family is having. If I don’t want the cheesy rice, or pasta I include for them, I throw whatever meat over a spinach salad and enjoy it just as much. I am allowing myself desserts and so far, I feel really good about what I am putting in my body!
I have noticed my energy level increase slightly and my desire to pig out on white bread and butter seems to have dissipated, without my really realizing it.
This week, in addition to my new salad yumminess, I am going to attempt 7 days of not eating past 8pm. Late night is my weakness. I think I can do it and if I am hungry, I am going to try green tea. It might keep me up, but hey, I am up anyways so… LOL.
So week one, I went from 167.5 to 166.1. Off to week 2 I go!
If I could eat spinach I would try this…but well, I'm not very good at eating anything that is green
LOL! Try it without spinach and sub in turkey! Turkey and ggs…. mmmmmmm :D
Good job. I think that sounds like a good plan, and you get to keep your sweets.

There are lots of decaf green teas that might help you feel satisfied late at night without keeping you up late! :) Or just plain decaf herbal teas are nice too (with some Splenda or artificial sweetener of your choice!) I find that those sometimes help my sweet tooth and trick me into thinking I had a dessert or snack ;)
I love spinach, I throw it into all kinds of food, it is my 'filler' food!
