Lately we have been hearing more and more about eating Gluten-Free and Celiacs Disease. But what does it really mean and how does it affect you and your family on a daily basis? And how can Udi’s Gluten Free foods help you whether you have it or not?
The truth is, it might not. Celiacs Disease is a digestive issue that affects the small intestine. People who have it can not tolerate Gluten, a common ingredient in most food and even some products, like lip balm. People with Celics disease can be overly tired, have depression or anxiety, artritis and so much more. It can be hard to diagnose but once done, a diet change is generally in order.
I have not been diagnosed with the disease and neither have my kids but I have been curious about the Gluten Free lifestyle for a while. I have digestive issues, am always tired and know that what I put into my body can vastly affect how I feel on a daily basis. So I was very interested in trying to create some lunches that were Gluten Free for me and for my daughters. Because if you don’t need it to survive and it can cause issues with some, why not try to eliminate it from your diet?
Udi’s Gluten Free food offer everything you need to make healthy, delicious lunches for your child and for yourself. I received the Udi’s Millet-Chi Bread {sooooo delicious wit melted Swiss and tomato on it!}, Udi;s White Sandwich Bread, Udi’s Au Natural Granola {Perfect for mixing into Yogurt}, Udi’s Chocolate Chip Cookies and Snickerdoodle cookies and a package of Glutino Pretzels!
With these ingredients, I created lunch after lunch that was Gluten Free and delicious!
For instance, I topped the Udi’s White Bread with Swiss Cheese and mustard, added a baggie of pretzels, some cookies and water and I was done. Easy, fast and delicious and filling! My daughter came home and asked that I make that for her every day! My favorite sandwich is egg salad! And egg salad on the Millet-Chia Bread was amazing!
I just boiled 2 eggs, let them cool and then chopped them up. I added Gluten Free mayonnaise, a little mustard and salt and pepper. And then I added some chives for a little crunch! I topped the sandwich and enjoyed the creamy, rich taste of a Gluten Free sandwich.
Other fun lunches are grilled chicken sandwiches, BLT’s – YES! – and grilled cheese! The possibilities are endless! Get more Gluten Free Lunch ideas from the Recipes Section of the Udi’s Website!
I am loving discovering the many options that Udi’s Gluten Free foods offer for anyone who wants to live the Gluten Free lifestyle. In fact, come back in a few weeks as I take on the challenge of going totally Gluten Free for 14 days straight! I am so excited to see if this helps me with my digestive issues and fatigue!

My 20 month old son was diagnosed with severe food allergies but not until he suffered for two months. We are still trying to find foods he can and will eat. Up until two months ago, he wouldn’t eat any table food except fruit. In addition to wheat, he is also allergic to eggs and dairy making it extremely challenging for us considering he is so picky.
I am not on a gluten free diet. But my mother was recently diagnosed with Celiacs and she loves the chocolate cookies.
