Here in Texas, we like a little heat with our sweet. We like sweet too, like my Warm Citrus Bake with Brown Sugar recipe, but if we can add a little kick to things, we do it! With me eating healthier kick, I consume a lot of fish. But, honestly, it gets bland. So I want to dress it up sometimes, add some flavor and create something that tastes different than I usually have! So, inspired by the beautiful, colorful and sweet tasting TexaSweet Citrus Rio Grapefruit I received, I decided to spice up my salmon with Texas Citrus Salsa!
- 1 Texas Rio Star Grapefruit, sectioned and chopped
- 1 large Texas Orange, sectioned and chopped
- 1 medium tomato, diced
- 1 cup red diced bell pepper
- 1 jalapeno, sectioned and minced
- 3 tablespoons chopped red onion
- 1 tablespoon chopped fresh cilantro
- 1½ teaspoon sugar
- ¼ teaspoon salt
- Throw all of the ingredients in a bowl and mix and serve!
I love the tangy heat that combined with the succulent fish. This would be awesome alone with pita chips, on top of sweet potatoes and more.
Finding the highest quality grapefruit for dishes like this is easy! Just shop Whole Foods or other quality retailers. Look for the bright red color on the inside for the sweetest flavor!
I strolled around Whole Foods the other day and saw all kinds of organic, delicious foods that I would love to incorporate into my family meals! One recipe I want to try is Grapefruit Sorbet! Just section and freeze grapefruit pieces, add lemon yogurt and zero calorie sweetener and you have a sweet treat that won’t undo your healthy eating you did all day!
