I can see the hints of Spring in the air. A flower is blooming in my yard, I am wanting to clean my house, the kids are begging to wear shorts. All the signs are there if Mother Nature would just comply. This morning, I got up with a Spring in my step. Ignoring the temperature gauge all together, I decided that a pretty cake was in order. Plus I have guests coming tomorrow and I wanted to have something special for them to enjoy! I looked in my cabinet and had three boxes of mix. Why not use them all? Thus was born my first ever Springtime Layer Cake. I must say, it is not perfect, but it is pretty darn close. And it tastes amazing!
- 2 boxes white cake mix
- 1 box Duff's Pink Camouflage Cake mix
- 10 eggs
- Vegetable Oil
- Food coloring
- Cool Whip Vanilla Frosting
- Springtime Morsels
- Decoration for the top
- Make the cakes according to the box. Use the food coloring to create a purple layer with one box of mix. Stack the layers in the color scheme you would like. I did purple, white, camo, camo, white, purple. Spread a thin layer of icing between. Ice the entire cake. Decorate with morsels and chocolate eggs on top.
I learned a few things while making this cake.
Using a serrated knife to cut off the top of the cakes, the ‘dome’, made the layers more even and smooth. But when you put the payers together, do it cut side down so you ice the uncut side. Otherwise the knife will tear your layer apart.
Use egg white instead of the whole egg for a whiter cake on the white layer. I also used them on the Duff’s Pink Camo cake to make the white brighter.
When decorating with the springtime morsels, I had the most success literally throwing the morsels against the cake. Hand placing them was taking forever and trying to slowly press with my hand made my hand, and the morsels messy!
This is a tall cake so a slim slice gives a ton of cake. But with the vibrant colors and the delicious flavors, your guests will be impressed and ask you how you did it!
Yes, I think everything made from scratch is better. But I am a single mom of three. So the boxes make my life easier right now!
