You know if you read my blog that I adore my neighbor!  She has quickly become one of my dearest friends!  In case you did not know, she is sometimes the ‘help’ behind my posts.  She helps with photos, ideas, the kids… anything!  And I fell like I can never, ever do enough for her as a thank you!  When she is not at my beck and call, she works full time, is raising two teenage sons, trucks them to activities and takes care of three dogs. All by herself.  So, since today, February 17, is Random Acts of Kindness Day, I thought I would take an opportunity to bestow her with an act of kindness!

And what better way to show someone how much you appreciate them than to make them dinner?  Luckily, I has received my wonderful Petit Jean Bacon and Ham Gift Pack that I ordered from KountrySpecialties.com and was dying to try them out!  So, I set out to make her family some yummy recipes with some high quality products!

Petit Jean Meats is the official meat of the Dallas Cowboys Football Team!  You know that if an organization like the Dallas Cowboys is using them, they have to agree!  And after making the ham and bacon for two dinners, one for us and one for my neighbor, I can see why!

I made my neighbor the smoked ham and then a side of Yukon potatoes, onions, Petit Jean Bacon and garlic.  Then I added some mixed veggies as a side!  Below is the very loose recipe for the potatoes as I just made it up as I went along!

Bacon and Garlic Potatoes – Lori Style

4 slices of Petit Jean Thick Slice Smoked Bacon, diced
3 Yukon Potatoes, diced
1 Tsp of Garlic,
1/2 of an onion, diced
Salt and Pepper

Brown the bacon.  Towards the end, throw in the onion for a light browning.  When the bacon is almost done, remember it will still cook a little out of the pot, pull the bacon and onions and put them to drain on a paper towel.  Add to potatoes to the pot, add a little salt and pepper and cover with a lid.  Cook on medium low until soft.  When soft, add the garlic and let it lightly brown.  Then add back the bacon and onions.  Serve and enjoy!

I have to tell you, I made this for both meals and it was fantastic!  I am dying to make it with the Petit Jean Peppered Bacon to see how that changes up the flavor!

When the potatoes were done, I used the same pan to heat up the Petit Jean Smoked Ham Slices!  Because they are pre – cut, they are easy to just throw in the pan to warm!  In hindsight, I made 5 slices for 4 people.  I should have made 10!  They were so juicy and good that the 5 were gone in no time, according to my neighbor!

For my husband’s meal, I made the Peppered Ham Slices and, oh my goodness, those were good!  Just the right combination of the salty ham with the kick of the pepper made me and him very happy ham eaters!

I really like the very high quality, extremely tasty meats from Petit Jean!  And as a Texas meat eater, that is a great compliment!
