Last year my son was diagnosed with food allergies. It explained a lot of his symptoms over the years, and while not something we were hoping for, definitely a manageable diagnosis. The original list meant we had to avoid peanuts, tree nuts, and sesame seeds.
At his one year evaluation, we had him tested for peaches, and not to my surprise we have added that deliciously juicy fruit to his can not eat list.
On the bright side, though, we did an oral challenge for peanuts. This is where, with the supervision of your doctor, the patient is fed increment amounts of the potential allergen to see if they have a reaction. It is the only 100% accurate way to diagnosis an allergy.
At the end of 3 hours, we walked out of the office knowing peanuts were no longer a concern! One less food for us to worry about. So in honor of this momentous occasion – and partly because yesterday was National Peanut Butter Day, I have pulled together these peanut inspired dishes to share.
