Slowly, as I am getting healthier, I am cooking meals from scratch once again.  But to create something really good, I have to have great ingredients.  Ingredients that are fresh, flavorful and versatile.  I want to use the ingredient more than once.

Prior to the package arriving at my door, I had not heard of Nakano Seasoned Rice Vinegar’s.  I had my standard Red Wine Vinegar and such in my cabinet but this looked really interesting.  Especially since I read on the bottle that this seasoned vinegar could be splashed on salads and more to enhance the flavor!  I am all about low fat, fun seasonings on foods that could be boring!

With my bottles I received a recipe book with 30 recipes from Mediterranean to Spanish cooking.  My mouth watered with anticipation as I flipped through the booklet.  There are so many to chose from.  But, I immediately chose a delicious looking chicken dish to make and a rice side.  I had all of the ingredients in my pantry – score- and got to work.  I modified things a little because my kids and husband have certain likes.

I started on the rice by chopping the yellow onions (as opposed to green) and tomato and onion and tossed it in the pan.  And then I added the smooth, crisp smelling Nakano Roasted Garlic Rice Vinegar.  I let the vegetables absorb the liquid and enjoyed the aroma floating through my kitchen.  I added the rice and the rest of the ingredients and let it cook.

Turning my attention to the chicken, I worked quickly on the marinade that I was turning into a basting sauce instead.  I can do that, it is my kitchen.  I threw the marinade ingredients in a bowl and inhaled deeply the clean aroma of Nakano’s Rice Vinegar mixed with the thyme, soy sauce and more.  I laid the chicken in and let it sit for a little while as I cleaned the kitchen!

As I cooked the chicken in a pan with a small amount of oil, I poured some of the marinade in as well.  I watched as it thickened and clung to the chicken.

The meal was amazing!  My whole family loved it!  The Nakano Vinegar’s seasoned the meat and rice perfectly.  I did not even use salt and pepper on the meal!  And I like that a lot!
