It’s HERE! Well, I have one week of Summer left with my kids but, for the most part, back to school is here! I am getting the last minute back to school clothes, the backpacks in order and the laundry done. My kids are going to bed earlier and I am getting them up earlier. My Math tutor is even coming today for some pre-school reminders for the girls. I am all set. Except I am not. Three kids, two schools, a new schedule… it’s a lot. The last thing I want to do after they get home and work through homework is serve them a dinner they won’t eat. Luckily, they love my Macaroni and Cheese Turkey and Edamame Cups!
I am as surprised as you are that my kids love these so much. They have green in them, after all. But with the cheesy yumminess of Annie’s Homegrown Bunny Pasta and Yummy Cheese Macaroni & Cheese as the base, they can not help but love them! Cutting out the Box Top and putting it in my pile to give to the school the first few weeks is just a big bonus!

Now that you have what you need to aid your school in getting what they need, let’s talk about the Macaroni and Cheese Turkey and Edamame Cups recipe that your kids will love!
These are great for a fast dinner and are easy to make. You just brown the turkey, add it and uncooked, shelled Edamame to the Annie’s Mac and Cheese and bake in cupcake cups! So easy and fun!
- 1 Box Annie's Homegrown Bunny Pasta
- 3 tbsp milk
- 1 lb ground turkey
- 1 cup shelled Edamame
- pinch of salt
- non stick spray
- Parmesan cheese
- In a pan, brown the turkey. You won't use the whole pound in the dish so set aside about half for another meal! While it is browning, make the Annie's according to package instructions. Use frozen or fresh Edamame. Add the turkey and Edamame to the pan with the macaroni and cheese and mix well.
- Set the oven to 350, spray your cupcake tin. Add the mixture to the top and pat down. Bake at 350 20 minutes until sides are golden.
