For those of you who follow me on Facebook, you know that I have a nutritionist that I love. I talk to Lorie Eber every week and have lost about 17 pounds. I have a ways to go still but I am trying. However, every week the same conversation happens. When are you going to get more veggies into your diet? The answer is always, ‘This week, I promise.’ Well, I am happy to say that, thanks Birds Eye Veggie Made™ products I may actually be able to keep my promise this week. My excuses of, ‘it takes too long to prepare veggies‘ or ‘they have no taste‘ are all busted. Plus with my all time new favorite, Birds Eye Veggie Made™ Mashed Sweet potatoes and Carrots with Brown Sugar, I am actually looking for healthier items to pair with them so I can enjoy them. That is why I made a beautiful Glazed Brown Sugar Salmon to go with them. So far, best meal ever!
Let’s talk about veggies for a second and why they are so hard to fit into my diet. First of all, unless I can steam them or put them in the microwave I am most likely not going to make them. I simply don’t have time. Ask Lorie… I make her tired just talking about my schedule.
Secondly, I never really learned how to properly cook veggies. Sure, I can toss some asparagus in a pan with some butter and hope they cook thoroughly but, really, they never come out like I want them to and area always blah tasting. So, despite a myriad of veggies that I actually do like and the plethora of recipes online, I just don’t want to put forth the effort.
Bird’s Eye caters to those of us who are excuse makers with simple and really, really delicious veggies that don’t taste like them. The sweet hint of brown sugar in the sweet potatoes and carrots makes these veggies seem like creamy bits of sweets. You would never know that they are actually good for you! Add to that the incredibly Sour Cream & Chives Cauliflower and you would think you are eating mashed potatoes! Be sure to pick up the new Birds Eye Steamfresh Veggie Made™ Pasta too! The kids love them and don’t even know they are veggies!
Like I said, having Bird’s Eye in my freezer makes me want to eat healthy. So to add to the deliciousness of the Birds Eye Veggie Made™ Mashed Sweet potatoes and Carrots with Brown Sugar, I wanted to make my Salmon pop too! Check out the Glazed Brown Sugar Salmon recipe below:
- 3 tbsp light brown sugar
- 1 tbsp mustard
- 2 tbsp soy sauce
- 2-4 8 ounce pieces of Salmon
- In a bowl, mix the light brown sugar, mustard and soy sauce together. Spray a pan with non stock spray. Place the salmon pieces on it. Top them with the glaze. Place in broiler for about 3-5 minutes. Pull out, add another topping of the glaze and place back in 1-2 minutes. Pull out and serve.
This combination is delicious and definitely a healthier option for me. Plus I get my veggies in which makes Lorie happy!

I love Salmon! I bet I could get my picky daughter to eat it too if I glazed it with brown sugar. Looks so tasty.
