There is nothing more I love from a store than a deal that not only benefits me and my family but also incorporates great products that I use everyday and won’t go to waste in my pantry.  That is why I am so *super duper* excited about June Dairy Month at Safeway stores and their affiliate!

Basically, using your loyalty card (mine is for Randall’s), purchase $40 worth of qualifying dairy products during the month of June and get a Catalina voucher for 2 FREE MOVIE tickets to see Ice Age: Continental Drift!  You don’t have to see that movie with them, but really-  WHO would not want to see Ice Age: Continental Drift?

Inspired by the fact that a) I get some great dairy products that I would buy anyway, b) a Freebie worth $26 for a movie I would take my kids to anyway and c) my desire to find some new dairy inspired recipes for my family, I headed to Randall’s!

Before I did anything though, I looked up a family favorite cupcake recipe courtesy of Ina Garten from the Food Network.  Flower Cupcakes use to be a treat that my family LOVED!  But I have not made them in years!  So I got online, got the recipe and made my list which included butter – lots and lots of butter – sour cream, and cream cheese!

Excited to have dessert planned, I wanted a spicier alternative for the actual meal! So, I went to the Sargento.com website and searched for something I had never made before!  I found Cheese & Beef Enchiladas and added the ingredients to my list!

I then loaded up my two oldest and headed to Randall’s!

I found the blue signs with the participating products in the dairy aisle with no problem at all!  They were all well marked and there were larger signs everywhere!  So I loaded up on my Sargento Cheese, my Daisy Sour Cream, my Philadelphia Cream Cheese, Land o’ Lakes Butter and so much more!  There is a TON to choose from!  From yogurts for the kids to orange juice…  you will have no problem meeting the $40 – especially throughout the month!

My kids and I had a blast picking up things for my dinner!  And at check out, just as promised, out came my Catalina for my 2 FREE movie tickets!  So I spent $40 on the dairy items but got a $26 freebie as a result!  Not too shabby!

Later that week, Ice Age Continental Drift Catalina safely tucked away, I was ready to make my awesome dinner inspired by the dairy products I bought and the recipes I stole from the internet!

The Cheese & Beef Enchalada’s were SO easy to make and so incredibly delicious to eat!

I browned the ground beef, added beautiful red and green peppers, added the taco seasoning and cup of water and I was on my way!  Buttering my casserole dish, I added the meat to the tortillas, added a LOT of cheese and then laid them in my dish.  Now, the recipe calls for salsa at this point, but I am not a huge fan of it, so I topped my enchiladas with enchilada sauce right from the can!  After I let them cook for about 18 minutes, I added a generous helping of cheese and let that melt another 2 minutes!

I topped the enchiladas with lettuce, a dab of sour cream and a some diced tomatoes!  I served them with rice that had butter that I mixed with taco seasoning to flavor.  I then added some bread that has the same butter/ taco seasoning mix – pretty genius right? – and the meal was complete!

And it was FANTASTIC!  These enchiladas were the right spice and flavor!  They mirrored restaurant enchiladas for sure!  I highly recommend them!

With dinner done, it was time to channel my inner Ina Garten and make some Flower Cupcakes!  Now these are from true scratch and worth ever single step and minute!  Now, I do not have a paddle attachment to my mixer because I don’t have a mixer.  So I use the good, old fashioned beaters and the cupcakes do not seem to suffer for it!

I mixed all of the wet ingredients, then sifted the dry and then I slowly blended them together until this fluffy, beautiful cloud of yumminess was created! I dished them into cupcake liners – the recipe makes me about 30 total – and popped them in the oven.

While waiting the short 20 minutes for them to cook, I mixed more butter, a pound of the cream cheese, some vanilla and confectioners (powdered) sugar and blended slowly until I had a sweet, beautiful mountain of homemade icing ready to use!

I iced and then decorated with some pretty cream colored ‘beads’, added some NON EATABLE flowers from my garden and the cupcakes were all done.  And divine. And addicting. And amazing!

It is amazing what you can make and create with dairy products!  And all this month you can create and be rewarded with 2 FREE movie tickets for your imagination!  I’ll keep you posted on our trip to see Ice Age: Continental Drift but in the meantime, what dairy recipes do YOU love and want to share with me?
