As April comes to a close and the school year winds down, we have some celebrations coming! While Mother’s Day is awesome and I can’t wait to spend the day with my kids, Cinco de Mayo lets me celebrate the spicy side of life! I get to indulge in Mexican food favorites and share them with my kids! One of our favorite foods is Taquitos and Tacos! The fastest and easiest way I have found to feed these to my kids is with Delimex Taquitos, Tacos and even Tamales! They are fast, fun, perfect for snacking and little hands and a great snack or addition to any meal! As I plan my Cinco de Mayo dinner with my kids, I want to spice them up a little with Cinco de Mayo recipes! So I made an Avocado Chipotle Dip, a Mojito Mayo Dip and added a Sombrero Fruit Plate that was fun to make!
Truth be told, I have been buying Delimex for years. I stumbled upon them a while ago when I needed some snacks for a party that were not the same old thing. I was not sure how they would be but once I tasted them, I loved them. They are a great pop in the oven, serve them up snack or addition to a meal.I also love that they are easy to pick up and eat. Curled up on the couch with some Delimex Tacos and dip is a great afternoon snack for me! I won’t lie!
Even though the Taquitos, Tacos and Tamales by Delimex are full of flavor, it is always fun to add another layer with great dips. I had two recipes that I have been holding onto for the perfect meal! My Avocado Avocado Chipotle Dip and Mojito Mayo Dip turned out to be perfect for these snacks!
- 4 ripe avocados, dices and then smashed
- ½ cup mayo
- ½ large tomato, seeded
- ½ cup finely chopped red onion
- 2 chipotle peppers in adobo sauce, diced
- 2 tbsp cilantro paste (in produce section)
- 2 tbs lime juice
- ½ chicken buillon
- 1 clove garlic, minced
- Mix all ingredients together in a bowl and serve!
This recipe has some kick but also some real creaminess to it! If you love guacamole you will love this!
- 1 cup mayo
- 2 tbsp cup cilantro paste (found in the produce section) or ½ cup fresh chopped cilantro
- 2 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 tbsp lime juice
- 1 tbsp white vinegar
- Mix all ingredients together and serve
I love this one best, to be honest. It is something a little different and adds a cool, creamy texture to the taste of the Delimex Taquitoes and Tacos! Despite the jalapeno, the dip is a hit with my kids too! The heat is very subtle.
Always wanting to add some more flare to any meal or snack for my kids, I also made a Sombrero fruit plate! This was so easy and fun and my middle daughter loved helping me put it together.
On a round plate, cut a cantaloupe in half. Clean it out and use the melon for the plate. Flip the empty melon onto the flat side of the plate for the hat. I used strawberries to run around it to give it more depth. Then add diced up watermelon, cantaloupe, honeydew melon, blueberries and grapes to fill in the brim. I added a Kiwi to the top because it is my middle daughter’s favorite fruit but you can get creative!
The Sombrero Fruit Plate makes a cool and fun addition to the Delimex Taquitos and Tacos and helps me and my kids turn a snack into more of a meal!
