Mexican Food is a general staple in this house. It is generally fast, always good and my kids love it. Therefore, any variation I can make on the recipes is a good thing. Even if it is as easy as changing the shell of my 5 Minute Ground Beef Tacos.  Quesadillas are easy and a great option for dinner. I can add just cheese, some chicken, ground beef or even veggies and make all kinds that my kids will eat. My current favorite is the creamy – and oh so deliciously messy – Chicken and Black Bean Quesadillas.

Chicken and Black Bean Quesadillas

These are so easy, kids can do it. You need some tortillas (corn works too), some cheese… lots and lots of cheese… a can of black beans, a can of chicken (you can use any you have already cooked as well. I just like these for speed), and some guacamole and tomatoes for garnishment.

Heat up your tortillas in the microwave. Pour the chicken (drain it first if you are using the can) and drained black beans in a skillet. Use a spatula to dice up the chicken to make it easier for kids to eat.  When the tortillas are done, layer the bottom one with lots and lots of cheese. Add the warm bean and chicken mixture to the top of the cheese. Add another slim layer of cheese to that and top it off with another tortilla.

Chicken and Black Bean Quesadillas

I then place my whole Quesadilla in the microwave for 10 – 20 seconds so it can all melt together. Use a serrated knife to cut. Add guacamole and a tomato and you have a fun, gooey, delicious dinner that anyone would love!

You can dress up your Quesadillas with salsa and other garnishments and you will probably need a fork. But these are fast, easy, delicious and an instant hit with kids!
