Summer time is winding down and it is time to hit the stores for back to school. Backpacks, clothing, school supplies and more are needed in this house for three this year! Yep. It is here. The year that I send all three of my little girls who have grown up too fast to school. All day and all week. I don’t know how I will handle it. But before I deal with the tears of that day, I have to get them all ready. Unfortunately, these things cost money. Times three. Walmart is trying to help us moms filing backpacks by Rolling Back prices in stores. In fact, there are 14 KRAFT items that are on Rollback and using them can help me create delicious simple dinners for less!

I headed to Walmart the other day with an idea to create a Cheesy Chicken and Hashbrown Casserole. I used to make it years ago but the recipe sort of got lost along the way. But since I am on a budget and a really tight one as back to school prep happens, plus – let’s face it – right before the 1st and the 15th of the month, things get a little tight anyway – I wanted to make something everyone loved that would not cost me more than $20 to make. This meal is easily two in this house so this is really budget friendly. Plus, who does not love a cheesy dish?

To make this recipe I started with the most important part! The cheese! I love mixing my cheeses in casseroles. It just adds more flavor. But I also want cheese that melts easily over the top for that cheesy effect when we cut into it. So I bought KRAFT Sharp Cheddar Shredded Cheese AND Velveeta Shreds! One for inside the casserole and one for the top. Plus, on Rollback, they were both totally in my $20 budget!

This Cheesy Chicken and Hashbrown Casserole will feed everyone deliciously and on a budget!

Ingredients
  • 3 cups of frozen chicken chunks or strips
  • 5 cups of frozen hashbrowns
  • 1 can of Cream of Mushroom soup
  • 1 cup of Kraft Shredded Sharp Cheddar Cheese
  • 1 cup of Velveeta Shreds
  • 1 cup of frozen broccoli florets
  • 6 tablespoons of butter, melted
  • salt and pepper to taste
Instructions
  1. Mix all of the ingredients EXCEPT the Velveeta Shreds in a bowl. Place in a casserole dish and bake at 400 degrees for 1 hour. Top the casserole with Velveeta Shreds and place back in the hot oven to melt. Let casserole cool and serve.

The casserole comes out hot and cheesy and delicious. Yes, I used a lot of bagged ingredients to make it but frozen chicken, frozen potatoes and frozen vegetables are not so bad. In fact, when adding the real cheese from KRAFT it is a great meal for a family of picky eaters that are on a serious Back to School Budget!

I rounded out my meal under $20 with a crisp salad topped with KRAFT Zesty Italian Dressing. The kick of the dressing offsets the creamy main dish and makes it all pop! All of KRAFT’s Dressings are delicious and I have an array in my fridge at any time. In fact, my little veggie lover, Megan, will eat almost anything with Kraft Ranch to dip it in!
