With the hustle and bustle of the holidays and the time crunch that always occurs, fast and easy recipes are necessary. But cutting corners can sometimes lead to less tasty foods. Fortunately, one of my favorite side dishes that everyone loves, Cheesy Bacon Rice, can have the prep time cut in half by using products like Minute® Rice. Minute® Rice is ready to go into any recipe in just 5 minutes. If you are a rice lover like me, you know that is a fraction of the time regular rice takes!
My Cheesy Bacon Rice calls for 2 cups of rice. Rice that normally would take 20 minutes to make. With Minute® Rice., I am getting this dish into the oven to cook in less than 10 minutes. Regular prep would be almost 30 minutes.
- 2 Cups of Minute® Rice., prepared
- ½ cup sour cream
- ½ cup chopped green onions
- 4 ounces green chilies
- 1 cup shredded sharp cheddar
- 2 tbsp bacon bits
- 1 teaspoon zesty Italian seasoning - or spicy seasoning
- salt to taste
- Parmesan cheese, amount per preference
- Make the rice. In the 5 minutes that takes, toss everything else but the Parmesan cheese into the bowl you will bake in. Add cooked rice. Top with Parmesan. Bake 20 minutes at 450 degrees. Serve
This recipe would be awesome with any of the product line.
