It is time for me to spruce up my holiday treats so that I can fatten up… I mean, make sure they all come out perfectly for my gift recipients. I have not made my Caramel pecan Squares in a while so I pulled it out, dusted it off and, using a new honey I found – Golden Blossom Organic White Forest Honey, recreated it to perfection. It may be even better than I remembered!
Schedule about an hour to get this recipe done. Not so much for constant work but for the cooling off periods needed to make it just right. Trust me, it is so worth it! The main ingredient is Pecans so you want to make sure you get some good one. I use the already crushed pieces to make my life easier. But if you are gathering them from your yard, just use a plastic bag and a rolling pin to crush them up.
As for the main ingredient that binds it together, you want to use the highest quality honey you can. Then caramel is created from the butter, brown sugar and honey and the honey you use defines the taste. Golden Blossom Organic White Forest Honey has a very distinct and delicious taste. It really makes this recipe pop.
These bars are fantastic. You can make them thick – like I like them – or thin into bars. it just depends in the pan you use.
- 3½ cups chopped pecans
- 2 cups flour
- ⅔ cup powdered sugar
- ¾ cup butter, cubed
- ½ cup packed brown sugar
- ½ cup Golden Blosson Honey
- ⅔ cup butter
- 3 tablespoons whipping cream
- Preheat oven to 350°. Line bottom and sides of a 13- x 9-inch pan with heavy-duty aluminum foil, allowing 2 to 3 inches to extend over sides. Lightly grease foil. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until lightly toasted and fragrant, stirring halfway through. Pulse flour, powdered sugar, and ¾ cup butter in a food processor 5 to 6 times or until mixture resembles coarse meal. Press mixture on bottom and ¾ inch up sides of prepared pan. Bake at 350° for 20 minutes or until edges are lightly browned. Cool completely on a wire rack (about 15 minutes). Bring brown sugar and next 3 ingredients to a boil in a 3-qt. saucepan over medium-high heat. Stir in toasted pecans, and spoon hot filling into prepared crust. Bake at 350° for 25 to 30 minutes or until golden and bubbly. Cool completely on a wire rack (about 30 minutes). Lift baked bars from pan, using foil sides as handles. Transfer to a cutting board; cut into bars.
These are such a great square to share and munch on. I like to top a warm square with ice cream to get an even more delicious dessert! Topping with whipped cream makes it a little more delicious too!
