In my house we have a term that we throw around quite often. That word, like recipe is Bethipe; I love to experiment with food. Sometimes we have a hit and other times… well, let’s just say we order pizza. Tonight, I decided to make Tilapia but we wanted something new to try. On our venture to create a tasty low calorie dinner, we were absolutely delighted with the results of our baked ricotta Tilapia and could not wait to share with you!
Baked Ricotta Tilapia

Ingredients
- 4-5 Tilapia Fillets
- ½ cup ricotta cheese
- ½ tsp. garlic powder
- ¼ cup minced celery
- 1 tsp. parsley
- 2 T. chopped green onion
- salt & pepper to taste
- cracker crumbs (I used 10 saltines and ¼ cup of cheese nips)
- ¼ tsp. garlic powder
- ¼ tsp. onion powder
Instructions
- Heat oven to 400 degrees
- Mix cracker crumbs, ¼ tsp. garlic powder and ¼ tsp. onion powder
- Press each fillet in cracker crumbs, they do not have to be completely coated (just press both sides into crumbs)
- Place each breaded fillet on to a pan coated with olive oil spray.
- Bake for 15 minutes or until fillets are golden brown and slightly crispy.
- While baking the fillets mix ricotta cheese, ½ tsp. garlic powder, celery, parsley, onion, salt and pepper.
- Pull the fillets out of the oven and put equal amounts of ricotta cheese mixture on each fillet.
- Place back in the oven for 5-6 minutes or until the top of the ricotta mixture is slightly golden.
We served our baked ricotta tilapia with roasted broccoli and a salad. The roasted broccoli was a beautiful side dish with the baked tilapia and the recipe is super simple!
Roasted Broccoli

Ingredients
- 2 broccoli heads with florets cut off.
- Olive oil spray
- 1 tsp. minced garlic
- salt & pepper to taste
- shredded Parmesan cheese
Instructions
- Heat oven to 400 degrees
- Place the broccoli florets in a large bowl and spray with a bit of olive oil.
- Toss with garlic, salt & pepper
- Bake on a cookie sheet at 400 degrees for 10 minutes (until florets are slightly browned) remove from oven.
- Add a bit of shredded Parmesan cheese and place back in the oven for 3-5 minutes.
We included a small salad to complete the meal. This will definitely be one of our regular meals, even our children ate it! We love a foodie hit!
