Baked Ricotta Tilapia

Ingredients
  • 4-5 Tilapia Fillets
  • ½ cup ricotta cheese
  • ½ tsp. garlic powder
  • ¼ cup minced celery
  • 1 tsp. parsley
  • 2 T. chopped green onion
  • salt & pepper to taste
  • cracker crumbs (I used 10 saltines and ¼ cup of cheese nips)
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
Instructions
  1. Heat oven to 400 degrees
  2. Mix cracker crumbs, ¼ tsp. garlic powder and ¼ tsp. onion powder
  3. Press each fillet in cracker crumbs, they do not have to be completely coated (just press both sides into crumbs)
  4. Place each breaded fillet on to a pan coated with olive oil spray.
  5. Bake for 15 minutes or until fillets are golden brown and slightly crispy.
  6. While baking the fillets mix ricotta cheese, ½ tsp. garlic powder, celery, parsley, onion, salt and pepper.
  7. Pull the fillets out of the oven and put equal amounts of ricotta cheese mixture on each fillet.
  8. Place back in the oven for 5-6 minutes or until the top of the ricotta mixture is slightly golden.
