Baked Ricotta Tilapia

- 4-5 Tilapia Fillets
- ½ cup ricotta cheese
- ½ tsp. garlic powder
- ¼ cup minced celery
- 1 tsp. parsley
- 2 T. chopped green onion
- salt & pepper to taste
- cracker crumbs (I used 10 saltines and ¼ cup of cheese nips)
- ¼ tsp. garlic powder
- ¼ tsp. onion powder
- Heat oven to 400 degrees
- Mix cracker crumbs, ¼ tsp. garlic powder and ¼ tsp. onion powder
- Press each fillet in cracker crumbs, they do not have to be completely coated (just press both sides into crumbs)
- Place each breaded fillet on to a pan coated with olive oil spray.
- Bake for 15 minutes or until fillets are golden brown and slightly crispy.
- While baking the fillets mix ricotta cheese, ½ tsp. garlic powder, celery, parsley, onion, salt and pepper.
- Pull the fillets out of the oven and put equal amounts of ricotta cheese mixture on each fillet.
- Place back in the oven for 5-6 minutes or until the top of the ricotta mixture is slightly golden.
