As a busy mom of three girls who are all in school, in gymnastics and super picky about what they eat, I am all about fast and easy recipes. As a mom who watches her budget, I am a huge promoter of easy meals with the least amount of ingredients. and meals that I always have the ingredients on hand for. Things that are not going to go bad if my week gets crazy, plans change and I have to make the meal I planned for Monday on Saturday. I always have a large supply of canned foods on hand for just those occasions. Whether I need them to throw in the crock pot with a whole chicken or a bunch to toss in for my Campfire Chili, canned foods can enhance any meal in a hurry! Just like my super easy 4 Ingredient Chicken and Rice Casserole, that I actually got off of the back of a can, cans make the meal in a hurry with flavor and ease.
Everything from canned soups to broths to beans to veggies are in my pantry. In fact, I have an entire shelf that has anything I need that I can quickly access to make a meal in a hurry. A can of soup over rice is easy, a can of soup in a casserole is flavorful and canned tomatoes can spruce up any sauce!

- 1 14.6 ounce can mixed vegetables
- 1 10.75 ounce can cream of mushroom soup
- ¾ cup uncooked rice
- 4 chicken breasts or tenders, uncooked
- Mix the can of veggies, soup and rice in a bowl. Pour in a casserole dish. Top with chicken. You can salt and pepper for flavor! Bake 45 minutes at 400 degrees, covered.
