Growing up, dinner with the family was mandatory. My Dad got home at 6 and my mother had dinner on the table at 6:05. We were expected to be there, smiles on, ready to chat about our days and take that time to reconnect. Now that I am a mom, dinner time is just as important. And like any good daughter, I steal most of my recipes from my mom. Like her amazing Lasagna! But also like a rebellious daughter, I like to change the recipe up depending on my mood. Thus was created my Vegetable Lasagna that I love. Created with Barilla Lasagna Noodles and Barilla Sauce and I have a dinner that will have my girls clamoring to eat and tell me all about their day!
Barilla pastas and sauces are everywhere. They are a consistently good brand and I often have several boxes of pasta and jars of sauce in my cabinets. But, as a single mom, saving money is key. So when stores like Randall’s (my Safeway affiliate) have sales like $1 off the purchase of ONE (1) box of Barilla® Lasagne and ONE (1) Barilla® Sauce, I have to stop when I am out and load up! But back to my recipe that will make your mouth water.
I LOVE No-Boil Lasagna noodles. I am a busy mom, as you know, and anything that can be done ahead of time is awesome. So layering with noodles straight from the box as opposed to from the hot pot is a plus for me. And with the holidays here – yes, they are HERE – I need all the time savers I can get!
Speaking of the holidays, my Veggie Lasagna can help yours be a little less ‘chunky’. In the midst of cookies, cakes, candies and fast food on the run, a colorful, healthier meal can reset our clocks and remind us that taking the time to eat our veggies is a good thing!
My Veggie Lasagna is basically squash lasagna. I love squash and layering it in between noodles and adding a good Tomato and Mozerella Salad along with it is a great way to have an old favorite serves a little new!
The recipe is so easy too. Instead of meat, you sub in yellow and green squash! Yep, it is that easy! I cook it a little less, just to get the noodles soft, really, and then serve it up pretty and delicious.
In this day and age, time gets away from us really quickly. Taking the time to create a delicious family meal with good products, having that nice dinner with people you love brings #JoytotheTable in this hectic time!

Mine is pretty plain, I like the way you jazzed it up with the zucchini squash. I like the Barilla pastas and sauces products, they have a nice flavor.
