For years, I have made pancakes wrong. I didn’t think I was but when my kids told me that their Oma made better, not brown, pancakes that they liked better, I have to pick up the phone and call her for her secret! The secret was simple: Instead of using butter in the pan, or cooking spray – which can make the pancakes dark brown – use a high quality Olive Oil to make them. If you do, you won’t even need butter to spread on top. I looked in my cabinet and found my trusty Pompeian OlivExtra Premium Mediterranean Blend. From that, and a few more tips from my mom, I made a stack of Strawberry Applesauce pancakes that came out delicious, buttery and perfect looking!

Now that you have accepted the challenge and become eligible to win, let’s get back to my delicious Strawberry Applesauce Pancake Recipe.
So the trick, ala my mom, also known as the best pancake maker around.
It does not matter if you make your mix from scratch or use a box, but if you cook them in anything but Olive Oil, you will get a dark brown bottom and top no matter how long or how slowly you cook them. So, instead, use Olive Oil. I use about a teaspoons worth and pour it on a medium high skillet. TIP: I use a paper towel to spread the oil out and to eliminate some of the liquid so it does not hinder cooking. Every time I do this, I get beautiful, light brown, delicious looking pancakes. And the approval of my kids who now think Oma and I are awesome pancake makers!
- 1-2 teaspoons of Pompeian Olive Oil
- 2 cups of Pancake Mix
- Strawberries, diced
- 2 TBSP Applesauce
- Cool Whip
- Make your pancake mix to almost the right consistency. Add diced strawberries and applesauce (which adds liquid to the mix). In a skillet or griddle, add one tablespoon of Pompeian Olive Oil. Spread it out with a paper towel. Drop circles of mix and cook until the batter begins to bubble slightly. Flip and cook another 30 -60 seconds until done. Add more oil to the pan in between rounds.
Another quick tip is to be careful of over-adding liquid to the mix. The applesauce will add some liquid so when you are making them, leave the consistency a little less than desired so that when you add the applesauce, it does not become to liquidy.
These pancakes are light, fluffy and delicious. They are a great way to get a few servings of fruit into your kids as well. Plus, since the Olive Oil has a buttery taste, no butter is needed on top either!
I love making recipes delicious by swapping out ingredients. Olive Oil instead of butter is just a no brainer!
