My morning cup of coffee is often my day saver. My second cup is my motivator and my third cup is just for pure happiness. I have a way I make my coffee that I love but every once in a while, I want to shake things up. My favorite way to do that is to add creamer to my cup! Recently I was in a store and saw something oh – so – tempting! NEW Coffee-Mate Latin flavors! I grabbed a bottle of Dulce de Leche and Mexican Chocolate and took them home to enjoy. In coffee, these flavors add a Latin flair that is hard to resist. But when I decided to add it to my Rice Pudding Recipe I came up with Dulce de Leche Rice Pudding and it is so amazing, I had to share!
It truly impossible not to fall in love with these amazing flavors! The Abuelita® Mexican Chocolate is a silky, cinnamony, rich, authentic experience that adds a little bit of heat and creaminess to your coffee. The La Lechera® Dulce de Leche is a creamy, dreamy, milk caramel caress from the Southern side of the continent. It makes my cup of coffee taste like a rich dessert in a cup. I don’t know anyone who would not love that!
So it makes total sense that when wanting to change up the flavor of my Rice Pudding, I would add some serious creamy flavor to it.
The recipe is simple. Instead of 4 cups of milk, I added 2 1/2 cups of milk and 1 1/2 cups of La Lechera® Dulce de Leche creamer. Everything else remained the same. What you get in the end is a rich dessert that can comfort with a Latin flavor.
- 1 cup uncooked rice
- 2½ cups of milk
- 1½ cups of Lechera® Dulce de Leche
- ½ cup of water
- 2 sticks of cinnamon
- 1 teaspoon fresh nutmeg
- 6 cloves
- 1 can sweet condensed milk - 14 ounce
- 1 can evaporated milk - 12 fl ounces
- ½ cup raisins
- ½ teaspoon vanilla extract
- In a saucepan, bring rice, milk, Lechera® Dulce de Leche, water, cinnamon sticks, nutmeg and cloves to a boil over high heat. Boil for 5 minutes, stirring constantly. Add the sweet condensed milk and simmer over low heat for 10 minutes. Add the evaporated milk, the vanilla extract and the raisins and cook for 10 more minutes until it thickens to the desired consistency. Add more milk if you want your rice pudding thinner, but it will thicken once it cools down. Serve it chilled or at room temperature. Garnish with more raisins or ground cinnamon.
Because the flavor of the La Lechera® Dulce de Leche is so thick and rich, adding it to this really makes the dish pop. Oh a rainy day – or on a cold one that is coming soon – this delectible dessert will warm you from the inside. Eat it at room temperature or chill it to have after dinner. Either way, this is a wonderful dessert for the whole family!
