Easter is right around the corner. Because the sun is out and the kids are outside playing, I am in a baking kind of mood! With the HUGE Pinterest Success of my Springtime Layer Cake, the ideas blossomed for other fun treats! With Easter around the corner and Peeps popping up on every store shelf, I thought a cute Peeps Cupcake recipe would be in order!

Peeps are a fun part of Easter! Make these cupcakes to celebrate!

Ingredients
- 1 box Cake Mix
- 3 Eggs
- ½ cup Vegetable Oil
- ½ cup softened Butter
- 2 tbsp Milk
- 2 cup Powdered Sugar
- Food Coloring
- Peeps Chicks or Bunnies
Instructions
- Bake cupcakes according to box directions.
- Transfer to wire racks to cool. Cream butter in a medium bowl. Slowly add in the powdered sugar, and milk as needed, until everything is incorporated and frosting is right consistency. Divide into equal size batches of the number of colors desired and add several drops of color to each. Transfer icing to piping bag or to a zippered bag and clip corner. Pipe icing onto cupcakes and top with Peeps.
How fun are these? Now you can get creative and use food coloring to make each cupcake a different color but this can get messy enough with just the icing! The sprinkles can be purchased at any retailer and they are essential to the fun of these cupcakes! I also love to use green sprinkles to create grass for the Peeps!
