What a fun take on the classic spring and summer time finger food! These brownies are super simple and delightfully tasty for any family & friends get-together! We have friends that always want brownies when they visit, so trying new twists on such a classic dessert is so much fun!  My children helped make these brownies and had such a blast putting them all together!

Peanut Butter Egg BrowniesWe used our favorite brownie mix and baked them per the package directions, adding 1 cup of chocolate chips the mix.

Once cooled, we cut them into strips and started cutting out the egg shapes with a plastic Easter egg that opens lengthwise.

Peanut Butter Egg Brownies Frosting

Ingredients
  • 1 Stick Butter (at room temperature)
  • 1¾ Cups Confectioners Sugar
  • ⅓ Cup Creamy Peanut Butter
  • 1 Teaspoon Vanilla
  • 2 Tablespoons of Milk
Instructions
  1. Cream together butter and sugar.
  2. Add Peanut Butter and blend well.
  3. Add Vanilla and milk and beat for 10 minutes until light and fluffy.

Scoop out the top center of the egg brownie with a small spoon and set the scooped out brownie aside.  Pipe in the peanut butter frosting just as if you were making deviled eggs.

Directions for piping in the frosting from my Tots:

Use a sandwich baggie and load it with the frosting. The frosting will most likely get all over your hands, you can eat that if you want.  Cut the corner off of the baggie and push the frosting down to the bottom. Squeeze the bag of frosting  in circles where you dug out a hole in the brownie egg.  There is no need to wait for friends to come over to eat a brownie egg. It is important that you know they taste good before you give them to someone else (that is what my mom always says, but sometimes she tests more than one).

These are so easy to make, we should really make them more often.  I think my mom eats more than her fair share anyway! P.S. My mom used a cake decorating tool to pipe in the eggs in the picture but they still taste the same as ours!
