If you are like me, you will be spending the next few days baking and preparing for the holidays. But, once they are done, you will start hunting for new, fun things to make for your family and friends. I am generally drawn to chocolate desserts but since I felt the need to ‘Dare to Carbonell’, I thought I would make something different. A challenge for me, if you will!  These awesome Olive Oil Lemon Cakes impressed me, my neighbors and even my kids.  But, as with any good recipe, it’s deliciousness starts with high quality ingredients. In this super easy recipe, I used the Classic Olive Oil. These Olive Oil Lemon Cakes came out moist and delicious and made it very hard to eat just one!

The one thing I love most about this recipe is that it is all made in a blender! Super easy, super fun and you will have delicious cakes on your table in less than an hour!

Olive Oil Lemon Cake

Mixing the batter was so easy. Add, blend, add some more. And as the Carbonell Olive Oil went in I could see it fluff the batter and make it creamier. I poured straight from the blender into my mini cups (mine made 22) and popped them in the oven. While they cooked I used fresh lemon juice from the lemons I zested and melted butter to make the lemon glaze.

At one point I thought it would be too lemony. It smelled amazing but it was so lemon! I need not have worried at all. When I pulled the fragrant muffins from the oven, let them cool just a minute and added the glaze, the refreshing taste of lemon melted in my mouth!

I was actually surprised at how delicious and refreshing these cakes were! I can not wait to make them again!
