Recently I had a little scare that could have easily turned out to be Diabetes. Turns out, it was my crazy thyroid acting in no way it was supposed to again. But in the testing and speculation, I started thinking of ways that I would have to change my diet if I were, in fact, diabetic! In the process, I could not fathom giving up the sweetener in my morning coffee, my sugar on my grapefruit or my oh so sweet chocolate desserts! But I knew that this should be a wake up call so then and there I decided to see what else was out there that would allow me to have the sweetness I love in dishes but not the sugar!

I’ll admit, I was a little nervous. I was not sure how to use the NuNaturals products! Thank goodness they also sent me a conversion chart and a ton of new recipes!
First things first. What did I use sweeteners in that I could switch out? My morning coffee came right to mind. Every morning, I put at least 4 packets of other artificial sweetening packets in my coffee. So, starting immediately, I switched to the NuNaturals NuStevia packets. Knowing that the NuNatural products contained 60% more natural stevia than other products, I started with just one packet in my coffee. It instantly dissolved, unlike some others and sweetened my coffee perfectly. With 1/4 of the normal product I would use! Making this economical as well!
Next I leafed through recipe after recipe of fantastic desserts, marinades, breakfasts and more that I received. I am not a “recipe creator” but I can take a recipe and make it fit with what I already have on hand! And since we do not have a “health food market” out here for specialty ingredients, I wanted to see if I could make some meals healthier and still delicious with NuStevia products!
My first attempt was a recipe for Healthy & Hearty French Toast! I am a French Toast junkie so to make this healthier would be GREAT!! This recipe uses the NuNaturals Vanilla Stevia Liquid in place of the sugar I usually use to make my toast a little “sweeter”. All I did was add the liquid drops to the egg whites. Can I tell you guys, my friend Donna was here to help me cook and even she said that “It was the best French Toast” she had ever had!
The perfect blend of the hearty whole grain bread with the sweetness of the NuStevia brought out the natural flavors and sweetness of the bananas I put on mine! It was DEVINE and I loved that I knew that it was healthier for me and my family! We make this recipe at least once a week now!
The next surprisingly good recipe I made was Carrot Cake Mini Muffins. My daughter Sarah needed some sweets for her Thanksgiving Feast at school so I thought, what a better reason to try this – oh so yummy – looking recipe? True to Lori form, I did not have all of the ingredients I needed – like the Ener-G Egg replacer. So I used an egg white. And I did not have enough regular applesauce so I used cinnamon. These were super easy to make, super moist and as sweet as you would expect a dessert muffin to be! Sooo good!

I have been using the regular Stevia from the grocery store. It tastes great. However, I stopped using it because when I put it into HOT coffee, it bubbles up to the point the cup becomes a little volcano and the hot coffee runs all over the place. One day it ran all over the inside of my wrist, burning me badly. I had a spot nearly 3″ around, according to the doctor’s measurements. All the skin came off and all I could see was raw meat. I thought it was a freak accident until it happened again. This time I didn’t get burned because I was standing far enough away from the cup when I put the Stevia in the hot coffee. Just the same, I had a big hot mess to clean up. I might use Stevia to bake with but I’ll no longer use it as a sweetner for hot drinks. Perhaps the Stevia you used was safe. The one from the grocery story is an accident waiting to happen. I won’t buy it anymore. It’s been 2 weeks and the burn is just beginning to heal and not without medical attention. Be careful.
