I found this dip on the Pompeian Recipe page and just changed a few things to make it more to my liking. I did not use the salt and pepper – I am trying to go lower sodium – and I did not add the chives. It did not change the taste much because the flavor really pops with the vinegar. Plus, the Extra Virgin Olive oil makes the dip smooth and creamy for dipping!
I used a really good Greek yogurt to start, added all of my veggies – I want to add bacon next time I make it, too – and then the vinegar and olive oil to stir. It took about 10 minutes with the chopping of the veggies and I could have eaten it with a spoon! The rich, creamy flavor had the crunch of the cucumber, a light flavor with the mint, and a little bite with the garlic and onions. I will definitely be making this again SOON and can not wait to see how else I can serve it!
