Fish Tacos with Garlic Aioli

I received an awesome pack from Red Gold that includes the awesome flavors of their Petite Diced Tomatoes – Garlic & Olive Oil, Lime & Cilantro, Tomatoes with Green Chili  and more – a Red Gold Apron, recipe sheet and a tomato spreader that Megan swears is hers. Anytime I receive high quality products, it gets my juices flowing to create something amazing. Something even my kids will eat!

So using the Red Gold Petite Diced Tomatoes with  Garlic & Olive Oil and 1/2 cup of mayo, I made Garlic Aioli to top crunchy Fish Stick Tacos! Yes, the recipe is that SIMPLE!

A can of tomatoes and mayo. Even I can do that! Now, some recipes you can dress up with other ingredients, but let’s start small, shall we?

The cooling, flavorful topper left no room for anything else on these tacos. Combined with the warmth and crunch of the fish sticks, the Aioli added a creamy layer of creaminess that will be hard to match!

I absolutely love Aiolo now. Instead of hunting through the fridge for lettuce, cheese and any other topper, I can have a two ingredient taco that has crunch, flavor and ease all in one! Talk about an easy summer lunch!
