We created these amazingly decadent double decker chocolate chip spring cookies with warmer days in mind! So light and airy, the filling just melts in your mouth while chocolate tickles your taste buds. The cute little bugs were created by the Tots using SweetWorks gumballs and food safe markers.
We use various chocolate chip cookie recipes, so our suggestion is to use your favorite one for these out-of-this-world confections! We have never made cookies from any kind of package before, but we tried the Hershey’s brand chocolate chip for this recipe. They were absolutely amazing cookies for this particular recipe. I really needed the cookie to be round and sturdy, yet fluffy and of course, scrumptious! The vanilla cream is so light and airy, full of vanilla and butter flavors.
- The Butter Cream for the Cookies
- 12 oz. Evaporated Milk
- ⅓ Cup Milk
- ⅓ Cup Flour
- 2 cups sugar
- 2 Sticks Butter at room temperature
- 1½ Tablespoon Vanilla
- Add evaporated milk, milk and flour to a saucepan. Whisk vigorously while it heats to boiling. Mixture will be thick. Remove from heat and allow to cool to room temperature.
- Once cooled, whip your butter, sugar and vanilla until light and fluffy.
- Add your cooled mixture and blend well until your frosting doubles in size, ~10 minutes.
- To color, use food coloring in spring colors to match your cookies.
