Lean Cuisine + Skinny Cow + Soy-Glazed Sweet Potatoes Recipe = Mommy’s Healthier Happy Meal

Sometimes making things for myself can get boring.  So even though I want to eat better and take better care of myself, I find myself popping the kids fish sticks into the oven for my meals too.  Especially on a day when all three kids are in school and I am trying to get everything done before they get home.

Lucky for me, and my waistline that I am still trying to whittle away, I discovered Lean Cuisine Asian Flavors at Sam’s a few months ago.  And I do love the ease and convenience of popping one of these in the microwave instead of something less healthy for me.  But even as much as I love them, I find that I still want a treat or something yummy to go along with my Lean Cuisine meal.

So, since I have eaten my entire 6 pack that I bought recently, I packed up the kids and headed out to Sam’s Club to see if I could find something fun to have with my Lean Cuisine!

Plus it is just fun to tool around Sam’s Club! Especially on sample weekends!  And my kids like the pizza there.  And it was lunch time.

 We ate first so that I did not spend my entire mortgage payment on food by being hungry and shopping and then headed straight to the frozen food section.  I knew my Lean Cuisine Asian Flavor 6 packs were on the end cap so I snapped those up in no time!  And then I strolled with the kids up and down the frozen food section looking for some other low calorie foods or dessert that I could have with my meals.  Along the way, I found Lean Cuisine Italian Flavors!  A 4 pack of Spaghetti and Meatballs and Parmesan Chicken!  YES PLEASE!  Oh my tummy grumbled!

As I left the frozen food aisle and headed to the ice cream sections –  dangerous, I know – I spotted the perfect compliment to my Lean Cuisine meals!  Skinny Cow Vanilla and Cookies and Cream Sandwiches!  Mommy was a happy girl!

You know what else made mommy happy?  The prices!  Right now, at Sam’s Club, through February, Skinny Cow is only $8.98 (was 9.98), Lean Cuisine Italian Flavors 4-pk is down to $6.98 (was 7.98), and the  Lean Cuisine Asian Flavors 6-pk is only $9.98 (was 11.25)!  I’ll take savings any time of the day!

I grabbed a few other things I needed, milk, eggs and some things for the kids, and headed to check out.  Only to find out that the credit card and debit card systems were down nationwide!  What?  So I rolled my full cart and my kids to the ATM machine and waited patiently for it to give me some money!

We finally checked out and headed home.   We stopped at the local grocery store and grabbed some sweet potatoes because I still wanted to make a side for my Lean Cuisine meal!

I so wanted to make a recipe I found on the Eating Well website, Soy-Glazed Sweet Potaotes to have as a side with my Lean Cuisine meals. It looked so easy and healthy!

Later that evening I was hungry.  Not wanting to fall victim to the kids meals again, I pulled out my sweet potatoes and got to cutting them up!  I followed the directions and ended up with some delicious sweet potatoes!  They were sweet and yummy and perfectly complimented my Sesame Chicken and noodles.  And then, when my plate was clean, I relished in the creamy, smooth flavor of my Skinny Cow Cookies and Cream Sandwiches!

Oh mommy was happy.  Especially since the entire meal was a ton healthier and more fulfilling than some heated up fish sticks!

Lean Cuisine Asian Flavors Make an Easy Healthier Dinner #FrozenFavorites

As most of you know, I am trying to get in shape and get my weight under control!  In fact, in the last 2 months I have lost 16 pounds and am pretty proud of myself!  But, I have to admit, come dinner time, I have a hard time eating the right things.  I guess I just work hard all day and assume that at dinner, I can do whatever.

In reality, I need healthier options.  But I need convenient, easy options that I can make and eat.  I am already making one dinner for the kids so, if I am going to do better at dinner, it has to be fast!  I do not intend to be a short order cook, after all!

The other day while sitting in the car line for my daughter, I realized I needed to head to Sam’s Club to take advantage of their $2.58 gallons of milk.  While there, I decided to see if there were any healthier options for me to enjoy at dinner time!  Sam’s always has a great selection of #FrozenFavorites so I was pretty sure I’d find something new and interesting!

I picked up Katie, told her and the girls where we were going and got silence.  In their defense, Megan was asleep and the other two were all reading on their tablets so they were occupied! Ahhh….  silence….

We got to Sam’s and I got that excited, I am going to find EVERYTHING I want cause it is Sam’s and it is crammed full of fun stuff, feeling.  I love Sam’s. We walked in and I took in the massive amount of space that is filled with electronics, clothing, food, cameras and so much more!

We tooled around for a while looking at everything from household cleaners to children’s toys but the kids were getting restless.  So, I headed to the refrigerated section for my milk and the frozen foods section for healthier dinner inspirations.  I checked out the pizza, convenience meals, frozen treats and more.

At the end of one of the aisle, I hit paydirt!  NEW Lean Cuisine Asian Flavor 6-Pack!  YUM!  That sounded delicious!  The 6 pack includes Chicken Teriyaki Stir Fry (yummy yum yum), Sesame Chicken and Ginger Garlic Stir Fry with Chicken.  All 330 calories or less with 9 grams of fat or less.  Not too shabby considering that they taste A MA ZING!

And just check out the ‘side’ I had with this meal!  Mandarin Oranges topped with strawberry yogurt and all natural granola.  Sort of a side and dessert all in one!  I was more than satisfied and felt really good about myself after this fun and taste bud pleasing meal!

I have to say, I was a little skeptical.  These are prepackages frozen foods after all. But I am really impressed with the tenderness of the chicken, the crispiness of the vegetables and the delicious, rich sauces that drip for every bite!  I feel like this is no where near healthy, but it is!  I would buy these again in a heartbeat at Sam’s and, in fact, on next months trip, I might buy more than one 6-pack!

And since I can buy them 6 at a time, thus saving money – only $1.88 per box! – and time, I am convinced that these meals are a great evening meal for me and any mom who is trying to take better care of herself!

Next time you are at Sam’s, pick up the Lean Cuisine Asian Flavor 6 – Pack.  I bet you find, like me, that the variety, price and ease of making these part of a healthy dinner is very satisfying!
