This Super Easy Slow Cooker Enchilada Chicken Nachos is just that... easy -and tasty!
Ingredients
  • 3 chicken breasts (I used frozen)
  • 1 can enchilada sauce
  • 1 cup Mexican shredded cheese
  • Tortilla chips
  • Toppings: guacamole or avocado or tomatoes or olives...
Instructions
  1. Spray the slow cooker with cooking spray to prevent sticking.
  2. Add in 3 chicken breasts, frozen or thawed
  3. Pour the can of enchilada sauce over the chicken.
  4. Set slow cooker on HIGH for 6 hours for frozen 4 hours for thawed. If you need to go 8 hours, use the low setting.
  5. When time is up, add the cup of cheese and cover for 5 minutes to melt it.
  6. Take two forks and shred the chicken in the slow cooker.
  7. With a slotted spoon, place chicken over pile of chips and add whatever toppings you want!
