Watermelon Cookies

These Watermelon Cookies are a fun add to any summer treat!
Ingredients
  • ¾ cup butter, softened
  • ¾ cup sugar
  • 1 egg
  • ¼ tsp vanilla
  • ¼ tspn almond extract
  • 2 cups flour
  • ¼ tsp baking powder
  • pinch of salt
  • red and green gel food coloring
  • mini chocolate chips
Instructions
  1. Combine butter and sugar until fluffy. Add in egg and vanilla and blend. In a separate bowl, add flour, baking powder and salt. Blend. Slowly add to butter mixture and blend. Separate 1 cup of dough. Add red food coloring to remaining and kneed until red. Roll into a log, cover with plastic wrap and refrigerate an hour. Cut the cup of dough in half and wrap one in plastic wrap and store an hour. Add green food coloring to the remaining and cover with wrap and refrigerate an hour.
  2. Pull out and roll out white dough. Wrap red log into it. Do the same for the green and wrap it around the log too. Refrigerate 2 hours.
  3. Slice and cut slices in half.
  4. Bake at 350 5 - 7 minutes, until the edges barely turn. Add mini chocolate chips as seeds and let cool!
