I Made a Dole Mandarin Orange Salad Instead of Cleaning My House #TropicalFruit

I got up this morning, groggy from being woken up several times by children who are suddenly afraid of the dark and looked around.  I wish I hadn’t. Everywhere I looked was a mess for me to clean up. My living room was in shambles, my dishes piled high and Megan’s room was a disaster.

I am tired of cleaning.

But I have to, right?  I am the only one that will get this mess straight again!

With a deep breath, I started to clean.  And then I stopped.  I decided that what I needed more than anything else was something fresh, crisp and delicious to eat that would motivate me to clean this house like a mad woman!  Do you ever do that?  Use something fresh and clean to get motivated to make something else fresh and clean?  No?  Must just be me.

So I loaded up my messy kids and headed to Randall’s, my Safeway affiliate, to find something good to eat.  I had a hankering for Dole Mandarin Oranges.  Have you had them yet?  Little bite sized pieces of citrusy goodness that burst with flavor in your mouth.  Oh we love them and I always have a can on hand!

As we strolled into Randall’s I noted that every time I go to this store, something is different.  For instance, this time they seemed to have seriously expanded their wine and beer selection!  I mean, it went on and on!  In addition, they had clothing for sale?  Summer dresses but still.  I don’t think I have ever seen that in this store.

As I meandered on, lazily – and by lazily I mean correcting my girls at every turn so that things and people did not get knocked over – I though of what I would love to have!  When I got to produce, it hit me!  A beautiful, colorful, crisp Dole Mandarin Orange  Salad!

I looked around to see if I could find a display that is supposed to be in Safeway affiliate stores that was to have Dole Pineapple, Mandarin Oranges and Tropical Fruit on it.  But I could not.  I blame the kids for distracting me while I looked.  But it is possible that my store just did not have it up yet!

Motivated, still, to not only get a good salad but to vacate the store with my minions, I headed to produce with purpose!  Knowing I had a Dole Mandarin Salad Recipe in my head, I aimed at fulfilling that checklist of ingredients!  Prepackaged Spring Salad, Black Olives, Dole Mandarin Oranges, a Red Onion, Feta Cheese and a sharp Balsamic Vinaigrette Dressing!

I loaded up on my produce and headed to the Canned Fruit aisle.  Right there next to Dole Pineapples, Tropical Fruit and variations were the Mandarin Oranges!  I meandered explaining to the kids why there were both crushed and cubed pineapple cans and looking at all of the dependable standby, high quality fruits that Dole offered.

The tug on my shirt stopped my mind from creating more recipes and we headed out.

Home – with messy house blinders on – I tossed the salad in a bowl and then sliced up the red onions really thin and threw them on top. I then drained and tossed in a spoonful or so of black olives.  The main ingredient, Dole’s Mandarin Oranges, I was not stingy on.  I tossed in the whole can.  Yes, I did!  Topping the salad with creamy Feta Cheese and a few tablespoons of tart balsamic vinaigrette dressing, I was ready to indulge!

I had no happy place to sit IN the house so I headed out to the back patio.  I savored every bite until the bowl was almost empty, patted myself on the back for the inspirational fresh salad, and then headed in to face the kids and the mess!

And in a few hours, I might actually make a dent!

Next time you need a refreshing meal, snack or just a reason to sit back and relax, do so with Dole’s Mandarin Oranges!  On salads, in the crockpot with pork and even as a delicious part of an ambrosia salad, they brighten up every dish!

A few weeks ago I loaded up on the dairy products in our house!  I needed to.  We were low on everything!  Another inspiration to get my dairy on is that, in the month of June, at your local Safeway stores, if you spend $40 on dairy within the month of June (not necessarily on one shopping trip), you will get two (2) FREE Movie Admissions!!

I don’t know about you, but spend $40 within a month (you have until June 31, 2012 to earn your tickets) and get a freebie which has you spending a hot afternoon in a theater watching Ice Age: The Continental Drift with free tickets worth up to $26 bucks, is a pretty darn good trade off!  And you don’t have to see Ice Age but really, who does not want to see Ice Age?

So, excited about my movie tickets, I headed to Randall’s – my Safeway affiliate – loaded up on dairy for the family, the kids and more and happily squealed a little when my voucher for my free tickets popped out of the Catalina machine!  You can see my entire dairy shop on my Google + Album and read about my process in my earlier post too! Be sure to check out the incredible variety of items you can get!  And lick your lips and the amazing dinner and cupcakes I made all by my lonesome inspired by dairy!  I stole the recipes, but STILL!

Now that I have my ticket voucher, it is time to get my tickets!  The instructions are right on the voucher and it is so easy to do.  Just log in to www.ActivateRewards.com/JuneDairyMovies, enter the code and follow the instructions.  The site will ask you to choose a theater and lists everyone around you to make it easier.  There is a short, 4 question survey that takes less than a few seconds and then you will get to your certificate page!  Print the tickets right then and there and then check your for your Hollywood Movie Money confirmation.  You will take the print out to the theater, not the voucher that you got from the Catalina machine at the store.

Ice Age: The Continental Drift is in theaters July 13, 2012!  We will be there opening week for sure!  My kids are super excited about it and I am looking forward to a comfortable, COOL few hours in the theater!  The free movie tickets voucher expires July 31, 2012 and you must use your free tickets that were sent to you by August 31, 2012.

It is just that easy to get FREE Movie tickets during #JuneDairyMovies month at your local Safeway stores!  You have several weeks left and, if your family is like mine, will have no problem purchasing $40 worth of dairy during this time to get your tickets!

Plus, let’s face it, it is just fun to get healthy yogurts, cheeses and more for your family!

Get FREE Movie Tickets During Dairy Month At Safeway Stores + Recipes #JuneDairyMovies #CBias

There is nothing more I love from a store than a deal that not only benefits me and my family but also incorporates great products that I use everyday and won’t go to waste in my pantry.  That is why I am so *super duper* excited about June Dairy Month at Safeway stores and their affiliate!

Basically, using your loyalty card (mine is for Randall’s), purchase $40 worth of qualifying dairy products during the month of June and get a Catalina voucher for 2 FREE MOVIE tickets to see Ice Age: Continental Drift!  You don’t have to see that movie with them, but really-  WHO would not want to see Ice Age: Continental Drift?

Inspired by the fact that a) I get some great dairy products that I would buy anyway, b) a Freebie worth $26 for a movie I would take my kids to anyway and c) my desire to find some new dairy inspired recipes for my family, I headed to Randall’s!

Before I did anything though, I looked up a family favorite cupcake recipe courtesy of Ina Garten from the Food Network.  Flower Cupcakes use to be a treat that my family LOVED!  But I have not made them in years!  So I got online, got the recipe and made my list which included butter – lots and lots of butter – sour cream, and cream cheese!

Excited to have dessert planned, I wanted a spicier alternative for the actual meal! So, I went to the Sargento.com website and searched for something I had never made before!  I found Cheese & Beef Enchiladas and added the ingredients to my list!

I then loaded up my two oldest and headed to Randall’s!

I found the blue signs with the participating products in the dairy aisle with no problem at all!  They were all well marked and there were larger signs everywhere!  So I loaded up on my Sargento Cheese, my Daisy Sour Cream, my Philadelphia Cream Cheese, Land o’ Lakes Butter and so much more!  There is a TON to choose from!  From yogurts for the kids to orange juice…  you will have no problem meeting the $40 – especially throughout the month!

My kids and I had a blast picking up things for my dinner!  And at check out, just as promised, out came my Catalina for my 2 FREE movie tickets!  So I spent $40 on the dairy items but got a $26 freebie as a result!  Not too shabby!

Later that week, Ice Age Continental Drift Catalina safely tucked away, I was ready to make my awesome dinner inspired by the dairy products I bought and the recipes I stole from the internet!

The Cheese & Beef Enchalada’s were SO easy to make and so incredibly delicious to eat!

I browned the ground beef, added beautiful red and green peppers, added the taco seasoning and cup of water and I was on my way!  Buttering my casserole dish, I added the meat to the tortillas, added a LOT of cheese and then laid them in my dish.  Now, the recipe calls for salsa at this point, but I am not a huge fan of it, so I topped my enchiladas with enchilada sauce right from the can!  After I let them cook for about 18 minutes, I added a generous helping of cheese and let that melt another 2 minutes!

I topped the enchiladas with lettuce, a dab of sour cream and a some diced tomatoes!  I served them with rice that had butter that I mixed with taco seasoning to flavor.  I then added some bread that has the same butter/ taco seasoning mix – pretty genius right? – and the meal was complete!

And it was FANTASTIC!  These enchiladas were the right spice and flavor!  They mirrored restaurant enchiladas for sure!  I highly recommend them!

With dinner done, it was time to channel my inner Ina Garten and make some Flower Cupcakes!  Now these are from true scratch and worth ever single step and minute!  Now, I do not have a paddle attachment to my mixer because I don’t have a mixer.  So I use the good, old fashioned beaters and the cupcakes do not seem to suffer for it!

I mixed all of the wet ingredients, then sifted the dry and then I slowly blended them together until this fluffy, beautiful cloud of yumminess was created! I dished them into cupcake liners – the recipe makes me about 30 total – and popped them in the oven.

While waiting the short 20 minutes for them to cook, I mixed more butter, a pound of the cream cheese, some vanilla and confectioners (powdered) sugar and blended slowly until I had a sweet, beautiful mountain of homemade icing ready to use!

I iced and then decorated with some pretty cream colored ‘beads’, added some NON EATABLE flowers from my garden and the cupcakes were all done.  And divine. And addicting. And amazing!
