Coffee is my vice.  All kinds of coffee.  Hot coffee, iced coffee, fresh coffee, coffee in my cup, coffee in my glass…  well, you get the point.  And I do drink several cups a day.

A while back I found the best invention since cubed cheese and have now had International Delight Iced Coffee in my fridge since then.  But, truthfully, the caloric count on the regular iced coffee limited my ‘spoil me’ time to once every few days or so.  I am not a diet fanatic, but after a while, a lot of calories at a time just makes me feel too full.

So imagine my squealing, happy surprise when I went to the store the other day and found International Delight Iced Coffee LIGHT!!  YES! Light!

Created with 1/3 fewer calories that the original delicious treat, the same Arabica beans are used, the same sweet and creamy taste is there… but it is 100 calories per serving!  And a serving is a cup!  Perfect for that little afternoon pick me up and treat!

I grabbed the Light version of Vanilla and Mocha flavors and headed home to make one of my favorite drinks!  A Mocha Banana Strawberry Iced Coffee Smoothie!

This is so easy guys, and soooooo delicious!  Just take a few strawberries, half a banana, some ice and a cup of the International Delight Iced Coffee and put them in a blender.  Now, a little trick to make it more smooth and offset the crunchy of the ice is to add a dab of Lite Whipped Cream right into the blender too!  Mix it all together, top it with whipped cream, a strawberry, some fun colored sprinkles to make it as pretty as you, and wala!  A light smoothie that has all of the deliciousness of the original one!

I am SO excited!  Because now that I know that the calories are seriously slashed, I can go back to having a fun treat in the afternoon if I want and still be able to button my jeans!

My International Delight Iced Coffee Party Was a Hit

I have talked about my love for International Delights Iced Coffee many, many times on here.  It is economical – costing less than $4 a carton vs $4 a cup at a coffee house – is delicious, and when had in moderation, can be a great, relaxing pick me up.  So when I found out that September 29, 2012 was National Coffee Day, I gathered my friends, served up some International Delight Iced Coffee and had a blast!

Since I, and many of my friends, usually purchase our Iced Coffee at a coffee house, it only makes sense that we find an alternative.  Making Iced Coffee at home was just too hard.  Pouring coffee over ice is just not the same thing, you know.  Not even when I added sweetener and milk did I even come close.  So, like 78% of American’s, I purchased them at the coffee shop.  And since I like them no matter what the season, it was really starting to play on my pocketbook.

So from the first time I tried International Delight Iced Coffee’s,  I was hooked!  It only makes sense that I would share with my friends and neighbors.

Even Megan, my 3 year old, got into the party planning mood!

 
I received a great little party pack in the mail in order to have the party of the month!  The items were so adorable and even included recipe cards that used International Delights Iced Coffee as an ingredient! Irish Coffee Delight, anyone?

Adding to the party pack I went to Walmart and purchased every flavor of Iced Coffee, including the NEW Caramel Macchiato!  I set up my Original, Vanilla and Mocha, put some tasting cups and goodie bags out and we had our coffee party outside so everyone could just come by and try some.

I have to say, the New Caramel Macciato flavor was a hit!  The Mocha was a close second though!

We sat around and talked and my friends were excited about their coupon that would help them buy a carton for themselves!  In fact, there always seem to be coupons available on their Facebook page and website so check there before you head to the store!

If you love Iced Coffee but hate the coffee house price, pick up some International Delight Iced Coffee at Walmart!  I buy it all the time and enjoy it as a treat every once in a while.  And every time it is rich, creamy and delicious!

Mocha Balsamic Glaze + Mocha Pistachio Pudding with International Delight Iced Coffee #IcedDelight

I love to cook.  Since moving to a house with all electric, however, I have had a hard time getting motivated!  The stove does not cook right and it’s just not the same as gas.  However, between my desire and my outdoor grill – which so needs replacing – I manage to make fast, easy recipes for my family that they all love.

But since I am such a busy lady, I have little time to go to the computer, search through thousands of awesome recipes and recreate them.  I am a “throw some stuff together and see how it tastes” kind of lady!

We are trying to add variety to our meals and I am making a lot more fish.  Any fish I love.  Salmon, Halibut, Flounder… anything.  But I can rarely eat it dry.  So the other day, while enjoying a small glass of my Blueberry Banana Strawberry #IcedDelight Mocha Smoothie, I had an thought.  Can I turn International Delight Mocha ready to serve Iced Coffee into a nice glaze for some fish?

I was sure I could balance the sweet with some depth and turn it into something yummy!

So that night at dinner I experimented and came up with a great recipe that I have already made again as a marinade!!  It has the perfect blend of tart and sweet and bite for a light, white fish and would also be fantastic over vegetables!  And everyone loved it, too so I banked it for future use!  It might seem a little weird – I am a little weird – but it really is so good!

Mocha Balsamic Glaze

1 cup International Delight Iced Coffee
2 Tbsp Onion Soup Mix
1 Tbsp Balsamic Glaze (or Syrup)
1/2 Tbsp Worcestershire Sauce
1/2 – 1 Tbsp Sugar

Mix all of the ingredients together in a bowl.  Transfer the liquid to a sauce pan.  Bring the glaze to a slight boil, stirring constantly.  When the sauce thickens slightly, remove from heat.  Pour a tablespoon or more over your fish and enjoy.

I used a prepackaged flounder fillet and laid it over a helping of steam in a bag vegetables.  Simple, fast and healthy for my family!

The glaze has some bite to it and a little background of sweet.  It pair perfectly with the light fish and vegetables.  I also want to marinade chicken or beef in it.  That great flavor absorbed into meat would be really good!

Inspired by my super easy creation, I wanted to do an equally easy dessert.  But all I could think is that this light meal would pair well with a rich, chocolate pudding.  Again, though, I wanted to see if International Delight Mocha Iced Coffee could play a role. So  turned to one of my favorite fast pudding recipes, Hasty Chocolate Pudding, that I have made a ton of times from AllRecipes.com.  And I wanted to see if I could add some yummy, buttery Pistachios and Chocolate Chips to it to make it that much better!

Mocha Pistacio Hasty Chocolate Pudding
Mostly borrowed from  AllRecipes.com

  • 1/2 cup white sugar
  • 1/3 cup unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • 2 cups International Delight Mocha Iced Coffee
  • 2 teaspoons vanilla extract
  • 1/3 cup Pistachios
  • 1/3 cup Chocolate Chips

Blend together the dry ingredients except for the Pistachios and Chocolate Chips in a microwave safe bowl.  Slowly add the International Delight Iced Coffee and whisk so that there are no lumps.  Cover with plastic wrap and microwave for 3 minutes.  Stir and microwave a minute more at a time until the mixture is smooth and creamy.  Mine takes 4 minutes total.  Add in the pistachios and chocolate chips and pour into ramekins.  Mine makes 5 perfectly.  Chill and serve cold.

So delicious, right?  And it is!  The crunchiness of te Pistachios and the bite of the chocolate chips makes this dessert a fun and delicious dinner bookend!

I love creating and amping up recipes with new ingredients.  I have discovered that International Delight Iced Coffee in Original, Mocha and Vanilla flavors and the International Delight Creamers are the perfect way to dress up a recipe!  I have loved cooking and creating with them and will continue to do so!

Inspired by International Delight: Blueberry Banana Strawberry #IcedDelight Mocha Smoothie #CBias

SUMMER IS HERE!  And I love it!  We are a water loving, relaxing in the late summer sun, outdoorsy kind of family that actually loves the incredible Texas heat!  Especially since it lets me enjoy some of my favorite treats that also cool me off!

You all know that I am an Iced Coffee junkie and that the introduction of International Delight Iced Coffee pour-able, ready to drink, cartons on shelves at Walmart was an answer to my craving  needs!   I LOVE them!  All three flavors!  Original, Mocha and Vanilla!

And during these sweltering summer months, I am enjoying the icy goodness even more! But, I’ll be honest, I have to monitor what I drink!  They are addictive and I could drink a whole carton in one sitting!  Especially since they are my drink of choice during my ‘me’ time!

Lately, though, I have been wondering if I can use my International Delight Iced Coffee and International Delight Coffee Creamers to do more!  Can I use them to cook and create yummy summer recipes that my family and friends can enjoy and refresh from, by chance?  I know there is a great recipes section on the International Delight website so surely I could come up with something fun too!

I headed to Walmart to get some ideas and more Iced Coffee and a deliciously flavored Creamer too!  I immediately saw the fruit sections and thought – hmmmmm – fruit makes a great addition to a smoothie!  So I picked up some bananas, strawberries and blueberries and started dreaming up concoctions in my head!

I headed back to the refrigerated section where the Iced Coffee was well stocked with all three varieties.  But before I chose my base flavor, I wanted to check out the creamers to see if something popped in my head as a good combination with the fruit!

This took the longest.  From the classic French Vanilla to the sweet flavors with Cinnabon and Almond Joy, there is, literally, a creamer for everyone!  I looked and looked and then my eyes landed on the Chocolate Caramel flavor.  And then it hit me!  I was going to make a Blueberry Banana Strawberry Mocha Smoothie!

Anxious to get home and try to see if these flavors would meld together and be de- licious, I headed out.  I was stoppped on the cookie aisle where I saw some Dark Chocolate Rolled Wafers.  Now wouldn’t that be fun to scoop up some smoothie with?

I could not get home fast enough!  And when I told my mom – who is here helping while I recover from my recent illness – what we were going to do, she immediately jumped in and wanted to help.  She is good like that!

Blueberry Banana Strawberry Mocha Smoothie

To a blender add:

2 Cups of International Delight Mocha Iced Coffee
1/2 Cup of International Delight Chocolate Caramel Creamer
1/3 of Blueberries
1 Medium Banana
2 Large Strawberries
Ice to texture
Whipped Cream

Blend the ingredients on the Puree setting until smooth!

Pour in a glass, top with whipped cream and a sprinkle of cocoa powder.  Add the rolled wafer.  Admire your work, stick a straw in it and devour the creamy, yummy goodness in a matter of minutes.  At least, that is what my dad did when he got a hold of one of the smoothies!

The fruit adds a fun summer flavor to the sweetness of the mocha.  And the creamer adds the creaminess needed for that super special treat.  Plus the health benefits of the fruit help counteract the rolled wafer!

This smoothie is an easy, fun treat on a hot summer day!  Give it a try and see if you love it like we do!

How International Delight Mocha Iced Coffee & My Kids Get Me Some Afternoon ME Time #CBias #IcedCoffee

There comes a time in every mother’s life where she has to admit that ‘me time’ is just impossible.  I call this time “Summer”.  With three young children now home 24 hours a day, 7 days a week and my imagination flailing on only day 3, I am floundering in the water struggling for air.  Much less finding time to rejuvenate my mommy motivation.

So, I came up with a plan.  For my sanity and to save my children’s childhood summer memories.

I am using them.  To be my pedicurist, my masseuse and my relaxation coaches!  And while employing them, I will relax and enjoy my favorite treat in a glass!  International Delight Mocha Iced Coffee!

I LOVE LOVE LOVE this ‘spoil me rotten but in a price range I can afford’ Iced Coffee drink!  I spend no more than $3.63 a carton – the two pack at Sam’s Club is even LESS per carton – and I can have at least 3-4 a week if I so choose!

To prepare for my wonderful 20 minutes of my kids doing nothing but focusing on pampering me – thus silencing the “Mommy, can I?”, “Mommy, I want!” and “MOMMEEEEEE”s that I hear all day, every day (and sometimes in my sleep), I headed to the store to get my Mocha Iced Coffee.  I noticed that there is really nothing else like this on the market today.  There are creamers and coffees that have to be brewed, but this is the only one where I can take it home, open it up, pour it in a glass and drink it!

Plus, you can dress it up for your special ME time if you want to!  Add whipped cream and chocolate shavings, add frozen raspberries,  sliced strawberries or just have it like it is.  No matter how you do it, it will be de-vine!

Once home I tried – for days -to get 15 minutes to myself to open my little goodie bag I got from International Delight to help me get motivated to relax – thank you so much – but I could not do it with three, Summer loving, kids around.

So, the other day, in deperate need of a break, I hired them!  And amazingly enough, they happily obliged!  I handed them nail polish for my mani/ pedi, lotion for my tired legs, a brush for the bird’s nest I pull into a ponytail and put my oldest to work on a shoulder massage!

I sat outside, happily letting my kids slather my legs, paint all over my hands and pamper me as only little ones can!  Messily!  But I did not care!  I had my glass of International Delight Mocha Iced Coffee and a few minutes to unwind while my children too ‘taking care of mommy’ very seriously.

And then, as a surprise, my two oldest seranaded me with their favorite song!  I was a very happy mommy!

 
I felt like I got some down time even with my kids right at my feet, literally, and I love that I have this great drink that I love to relax with!

Save on the coffee house costs and spoil yourself rotten at home!  Head to Sam’s and get your two pack and hire your kids!  Best afternoon me time ever!
