It has been well documented on this blog, my Facebook page and other social media networks that I am getting healthier in my life. It has nothing to do with the new year, nothing to do with weigh loss (though that can be an added benefit) but my body was starting to fail me and needed an adjustment. One of the things I am doing is creating healthier dinners that are just as fast and easy as convenience foods. But with real ingredients and supreme taste! Like my Salmon, Asparagus and Mashed Sweet Potatoes dinner!

Healthier eating starts with the very basics. I have been substituting my regular vegetable spray for Pompeian Grapeseed Oil 100% All-Natural Cooking Spray (Get $1.00 OFF Pompeian Oils). Some tips for your meal.

The Salmon seems to cook more evenly and faster if covered. So I cook on one side for about 4 – 5 minutes covered and then flip the Salmon and recover for 2 – 3 minutes. The fish is done when  it is easy to cut and sort of flaky.

The Sweet Potato recipe is super easy. You can add all kinds of things to it to dress it up. I have a friend who grinds up carrots and adds them in for crunch. You can add ground cinnamon and nutmeg too for a sweeter flavor.

The Prosciutto gives the Asparagus a salty flavor. So there is no need for additional sodium at all. You can change out this recipe with broccoli, Brussels Sprouts and even green beans!
