It is possible that I am having a second helping of my Easy Mixed Berry Shortcake as I type. Without you physically being here, you can’t prove it. But it is possible. How can I not? It is beyond delicious and took me less than 10 minutes to put together. This is an easy and delicate recipe that can be thrown together for an after dinner treat everyone will love! My shortcuts start with the berries. Let’s face it, you can sometimes hit or miss with fresh produce at the store. Plus, the shelf life is really short. I don’t know about you, but when I want something, I want ingredients that I can pull out anytime and rely on to be delicious. That is why I stocked up on NEW Welch’s Frozen Fruit at Meijer’s.

Available in Welch’s Blueberry Fusion, Welch’s Tropical Blend and Welch’s Antioxidant Blend, these berries are just as good (if not better) as fresh ones. They last longer, are as flavorful as the ones in the produce area and can be stored for a lot longer in the freezer for later use! You can thaw them and eat them plain and savor the fresh fruit flavor you love, add some whipped cream for an easy snack or use them in your favorite recipe that calls for fruit!
I love them because they save me money, save food waste, taste fresh and delicious and are available in my freezer if I decide to make my shortcake on a whim!
This recipe is so simple you will wonder why you did not discover it sooner! The cream on the top has a unique twist and the fruit pops with flavors of sweetness and delicacy. I absolutely LOVE it and I bet you will too!
First things first, grab any variety of Welch’s Frozen Fruit from your freezer and open it up. You can pull out as much fruit as you want to thaw. I used a whole package equaling about 2 pints of fruit to make 6 cakes. You can even blend the fruits for even more flavor! But as you get used to the recipe, you can adjust it!
- 1 bag Welch's Frozen Fruit, any variety you like
- ⅓ cup sugar
- 2 tbsp fresh orange juice or lemon juice
- Cream
- 1 7 ounce package plain Greek yogurt
- 1 cup cold heavy cream
- ½ cup sugar
- 2 tbsp brown sugar
- Pull out the Welch's Frozen Fruit you are using to thaw. Pull out the pre-made shortcakes that you purchased at the store. Rinse the Welch's Frozen Fruit to help thaw. Once done, add the sugar and juice and gently stir. Set aside so the syrup can set on the fruit.
- Meanwhile, in a small bowl, add the cream, yogurt, sugar and brown sugar. Using a hand mixer, whip the ingredients together until it forms a peek. It takes about 5 minutes to get the right consistency.
- Place the pre-made shortcake on a plate. Top with the fruit mixture then top with the cream. Add a little cinnamon on top for garnish and serve!
To make this recipe even easier, I use pre-made cakes that are in the bakery section. They are plenty good and take the step of making my own out of the mix. That saves so much time in the end!
It’s possible that there will be no more of these left in my home within the hour if I don’t start handing them to neighbors! They are so good and so creamy and so flavorful that your taste buds will want more!
