Cast Iron Skillet Bacon and Potatoes Recipe

This Cast Iron Skillet Bacon and Potatoes Recipe is perfect for that Texas loving dad in your life!
Ingredients
  • ½ bag potato medley (I used small white, purple and red potatoes I found in a bag at HEB)
  • 1 red pepper, diced
  • 1 green pepper, diced
  • ½ onion, diced
  • ½ tspn garlic
  • ½ - 1 cup cheese (pepper jack and cheddar were my choice)
  • 5 slices Wright Brand Bacon
  • 1 egg
Instructions
  1. Cut and boil the potatoes in water for about 20 minutes or until soft.
  2. Cook the Wright Brand Bacon in a cast iron skillet, leaving the grease when you take it out. Place on a paper towel to cool. Add red and green peppers, onions and garlic to hot pan. Stir until soft.
  3. Add in potatoes and toss. Add in 2 slices of Wright Brand Bacon, torn into 1" thick pieces.
  4. Top with cheese and cover to melt the cheese.
  5. In a pan, cook egg as sunny side up. Season with salt and pepper.
  6. Place egg on top of potatoes and add the last three slices of Wright Brand Bacon.
  7. Top with buttered bread and serve.
