I have a confession to make. Things are a bit out of control here. My food storage area is a hot mess, my fridge was a scary place and I did not see many ways to improve the situation. I mean, you can only do so much with three kids and four dogs running under foot, rummaging through things and spilling anything they can get their hands on. One of my biggest pet peeves in my kitchen is not knowing what I have. The biggest irritation is the food I store in the fridge. I make it, promise I will have it as leftovers and then forget about it because I can not see what is in the container. This recipe was given to my mom by my Aunt Sandy and is now a favorite of mine. It is super easy, super delicious and perfect for any gathering. With the Big Game coming up, I want to impress. So I threw together a batch and am storing it in my crystal clear Rubbermaid® BRILLIANCE™ food storage container to pull out and take to the party!
- 2 15 oz cans black eyed peas, drained
- 1 11 oz shoepeg corn, drained
- ½ cup chopped cilantro
- 3 cloves garlic, minced
- 5 green onion stalks, chopped finely
- ½ cup olive oil
- ½ cup red wine vinegar
- 1 tspn salt
- 1 tspn pepper
- 2 tspn cumin
- Throw all of the ingredients in a bowl. Mix well and store in the fridge for at least 2 -3 hours. Can be stored longer. The longer is sits, the more the flavors marry. Serve with scoopable chips!
