We have all know that dads matter and on Father’s Day we really get to go all out. My parents live a few hours away but I love to make sure I at least go visit on the ‘big days.’ So, as I plan for a Father’s Day celebration, I wanted to do something that is going to impress him but that may be a little out of the box. Walking through HEB the other day, I picked up my regular package of Wright® Brand Bacon. It has been my go-to for as long as I can remember. First of all, I love any Texas brand but secondly, the naturally hickory smoked flavor of the thick sliced cuts are matched by no other.

How many dads have breakfast made for them on Father’s Day? Moms notoriously get breakfast in bed, but dads? Sure, they get breakfast, but a special, Texas-themed, delicious cast iron skillet packed with all of their favorite foods is a better idea!

This Cast Iron Skillet Bacon and Potatoes Recipe is perfect for that Texas loving dad in your life!

Ingredients
  • ½ bag potato medley (I used small white, purple and red potatoes I found in a bag at HEB)
  • 1 red pepper, diced
  • 1 green pepper, diced
  • ½ onion, diced
  • ½ tspn garlic
  • ½ - 1 cup cheese (pepper jack and cheddar were my choice)
  • 5 slices Wright Brand Bacon
  • 1 egg
Instructions
  1. Cut and boil the potatoes in water for about 20 minutes or until soft.
  2. Cook the Wright Brand Bacon in a cast iron skillet, leaving the grease when you take it out. Place on a paper towel to cool. Add red and green peppers, onions and garlic to hot pan. Stir until soft.
  3. Add in potatoes and toss. Add in 2 slices of Wright Brand Bacon, torn into 1" thick pieces.
  4. Top with cheese and cover to melt the cheese.
  5. In a pan, cook egg as sunny side up. Season with salt and pepper.
  6. Place egg on top of potatoes and add the last three slices of Wright Brand Bacon.
  7. Top with buttered bread and serve.

Here are some tips on this recipe:

  • Make sure the pieces of Wright Brand Bacon that you add back in are big. The flavor of the bacon pops with nice, big pieces! Don’t crumble or they will get lost in the potatoes.

  • Do not add oil or any other liquid to the cast iron skillet. The bacon leaves a rich flavor that cooks everything perfectly.
  • Use any cheese you want. I used a combo of pepper jack and cheddar shredded cheeses for more flavor.

  • The only thing I seasoned was the egg and I used a salt free seasoning with a little Texas heat. The bacon creates all of the flavor you need!

  • I cooked the egg sunny side up but you can scramble eggs and add them in. If you scramble, use more than one egg.
