Making a healthy dinner for my kids is sometimes a challenge. As any mom knows, satisfying kids at meal time is hard enough but making something that is better than what they want and actually getting them to eat it are two different things! We love chicken here but since we don’t eat a lot of red meat, I also want to incorporate fish into the weekly menu. Not an easy task with little ones, I won’t lie. However, if I can find a creamy flavor that they love, I can add to about anything and get them to at least try it, which almost always leads to liking it. The other day, wandering through Walmart, I spotted something that I thought was new. Turns out, it was the same delicious and creamy Kraft Dips that I love with everything but in a brand new, awesome looking package! I grabbed all three classic flavors in the new package and as I did, had an idea that might just lead to my kids loving fish! Thus came to fruition my Bacon & Cheddar Baked Cod Recipe!

I love cod. It is flaky and soaks up flavor really well. I also love any Kraft Dip on the shelf! So combining the two seemed like a brilliant idea! The new packaging pops from the aisle where it has always been. My two Walmarts did not have them out yet, but look at yours for the shelf tag that points out that the same great flavor of Kraft Dips is now updated and ready to party!

Anyone who has ever had a party or gathering knows that the rich, creamy taste of Kraft Dips is always a hit. So using the tangy, unique flavor in savory dishes is just smart! This dish can be made with any of the three flavors in the new packaging; Kraft French Onion Dip, Kraft Green Onion Dip or Kraft Bacon Cheddar Dip. Because we love Bacon & Cheddar with pretzels and more – try it on potato skins! – I decided to give this recipe a shot with that one first!

Ingredients
  • 2 pounds cod
  • veggie stock
  • Salt for flavor
  • 2 cups Kraft Bacon & Cheddar Dip, divided
  • 1 cup seasoned breadcrumbs
Instructions
  1. Set over to 350.
  2. Divide the Kraft Bacon & Cheddar Dip into two bowls. Add the breadcrumbs to a third bowl. Add a little veggie stock to one bowl to thin out the dip. I will defrost for about 10 seconds in the microwave to give it a thinner consistency. Place the other half of the dip in the fridge. Salt the cod slightly (there will be salt in the dip so be sparing) and roll it in the thinned out dip. Dip the cod in the breadcrumbs and lay in a vegetable sprayed baking pan. Repeat with the remaining cod. Bake at 350 for about 20 minutes. Take the other half of the dip and heat it up slowly with either the microwave or stove top. gently pour over the fish patty and serve!

This recipe is super easy and you can do the same thing with chicken as I did with the fish. Another great way to use this dip in one easy step is to toss it into a crock pot with chicken. Cook it on low for 4-6 hours, until the chicken is done. Serve it up and enjoy! It does not get easier than a 2 ingredient slow cooker meal!

My Bacon & Cheddar Cod came out delicious, creamy and flavorful! I really could eat this every night for dinner! I paired it with some veggies to make it even more delicious. The veggie in the dip that is warmed up is AH-MAZING!
